Abstract
γ-Glutamyl peptides and acidic cysteine derivatives were found in low concentrations in asparagus shoots. However, the presence of α- and βaspartylaspartic acid, α-aspartylglutamic acid, γ-glutamylaspartic acid, γ-glutamylglutamic acid, γ-glutamyltyrosine, S-(2-carboxy-n-propyl)-L-cysteine and S-(1, 2-dicarboxyethyl)-L-cysteine was demonstrated in the acidic amino acids fraction of asparagus shoots.
