A new γ-glutamylpeptide, γ-glutamylnicotianine was isolated from a cationic peptide-rich fraction of Lentinus edodes, and the structure was confirmed by enzymatic synthesis. The presence of lactam of saccharopine and γ-glutamylglutamic acid was demonstrated in the fraction.
