A simple method of comparative assessment of anthocyanin content was investigated by ultraviolet-visible (UV-Vis) spectroscopy using blueberry fruit. The extraction solution of anthocyanin from frozen crushed fruit was measured without centrifugation or filtration. The results showed a high correlation between the amount of sample and the absorbance. It was also showed that the anthocyanin content was vary considerably with variety of blueberry. Consequently, the method was expected to effectively use in functional food development and the other fields.
