Abstract

In the Edo era when the shipping transport culture prospered, the riverbank area was important as a place with economic effects. Among them, "Ryoutei" located along the river was securing sales style and spatiality considering the water culture. We selected restaurants from the "Kaiseki Sokuseki Oryouri" and analyzed the location characteristics and the changes in the number of cases. As a result, many restaurants proved to be related to transportation culture. It has become clear that it is decreasing due to the decline of shipping transport culture accompanying economic growth and the decline of river value.
