Extractive components of kuruma prawn Penaeus japonicus

The extract was prepared with methanol from the abdominal muscle and roe of kuruma prawn being 90g caught off Miyazaki, Japan. Kuruma prawn weighing 11-23g was also obtained monthly for 7 months from a shrimp farm in Kagoshima, Japan and the methanol extract was prepared from the abdominal muscle. Free amino acids and ATP related compounds in the extracts were determined. The muscle extract was rich in glycine, arginine, glutamine and proline. In the roe extract, large amounts of taurine, glutamic acid and glycine were detected. The amount of glycine in the muscle extract was increased in spring. Among ATP related compounds in the muscle extract, 5'-AMP and 5'-IMP were the major components. As the results of the sensory taste test, sweetness of the April solution was judged to be stronger than that of the November solution (p<0.001).
