In this study, we present a nondestructive evaluation technique based on quartz complex capacitive sensors to monitor the hydration of cement-based materials. We monitored the hydration of mortar with this sensor and under different conditions of the hydration reaction rate factor. As a result, we found that the sensor can evaluate the progress of the reaction process nondestructively by detecting dielectric and conductive changes in the hydration mortar and concrete. This technology is expected to improve the productivity of cement-based materials and contribute to the construction and civil engineering fields.
