This paper introduces a practice for introduction of service engineering for restaurant industry. The restaurant industry is one of the key industries in Japan; the industry hires 4 million staffs, and a market size is 25 trillion yen. However, the labor productivity of Japanese restaurant industry is lowest among Japanese service industry. It is important to improve productivity for the industry, restaurant employee, and Japanese economy. This paper introduces a concept of value creation system for service industry and an example of activity for productivity improvement.
