It is generally accepted that amount and balance of lipid and carbohydrate, not only protein, in feed affect feed utilization and protein retention of culture fish. They are, then, fed with high energy feed, causing high cost for aquaculture, loss of food resources, deterioration of meat quality because of lipid oxidation and ecological despoliation. Control of lipid and carbohydrate metabolisms in culture fish will enable us to manipulate feed utilization of culture fish more efficiently. The aim of this study is to reveal lipid and carbohydrate metabolisms in fish and establish methods for quality improvement of culture fish using phytosteryl hydroxycinnamate esters, such as γoryzanol (ORZ).
