Sesame lignan glucosides inhibited lipid peroxidation effectively. Five lignan glucosides obtained from germinated sesame seeds were investigated in detail. Lignan glucosides inhibited the formation of TBA-reacting substances (TBARS) and conjugated dien on the lipid Peroxidation reaction of linoleic acid by a H2O2/FeCl2 system. Lignan glucoside at 0.02∼0.03 mM inhibited 50% of the formation of TBARS from linoleic acid. They also inhibited the formation of TBARS from polyunsaturated fatty acids such as linolenic acid and arachidonic acid. The inhibition effects of lignan glucosides were compared with other standards in this system. The order was BHT > α-Toc > lignan glucosides > quercetin > catechin >>mannitol. Lignan glucosides also suppressed enzymatic (ADP/NADPH/FeSO4) or nonenzymatic (H2O2/FeCl2) lipid peroxidation by microsomes. These effects were dose-dependent.
