Total, neutral and phospholipid compositions were compared to freshwater (FW) fishes and seawater (SW) fishes. The total lipid amounts were compared to fish of FW environment and SW environment. Phospholipid compositions from various organs of guppy and masou salmon were compared to FW and SW environment. Neutral lipid compositions from various organs of guppy and masou salmon were compared to FW and SW environment. The total lipid amounts, the ratios of phospholipid to neutral lipid and lipid composition were affected by the rearing environmental salinity. In SW adaptation of the guppy, the total lipid amounts decreased in the whole body, eye, liver and muscle while these increased in the gill, digestive tract and kidney. Total phospholipid amounts increased in the whole body, eye, gill, digestive tract, liver and kidney in SW adaptation. Phosphatidylethanolamine and sphingomyelin of the gill, digestive tract, liver and eye increased in SW fishes, while phosphatidylcholine of the kidney decreased. Triglyceride and free cholesterol of all tissues decreased, while cholesterol esters increased in SW. Of the fatty acids, C_<14:0>, C_<16:0>, C_<16:1>, C_<18:0>, C_<18:1>, C_<18:2>, C_<18:3>, C_<20:2>, C_<20:3>, C_<20:4>, C_<22:4>, C_<22:5> and C_<22:6> were the main fatty acids present both in FW and SW fish. The proportion of saturated fatty acids to polyunsaturated fatty acids decreased in SW adaptation.
