The purpose of this study is to obtain the basic data for the planning of ventilation in the kitchen of restaurant with electrification appliances. In this paper, we investigated the energy consumption in a restaurant and in each appliance. From these results, we classified the appliances into three patterns from the view point of the heat loads generated by cooking. And we showed the load factor of electric power per capacity in each appliance and in each exhaust system.
