In this study, we attempted to control the adhesion of lactic acid bacteria by coating hydrophilic titania nanoparticles on a stainless steel substrate to investigate the adhesion of microbial cells to the solid surface in the initial stage of biofilm formation. As a result, it was found that by coating titania nanoparticles on the surface of SUS304, the number of adhered lactic acid bacteria was reduced by about 97%. This is in good agreement with the thermodynamic prediction based on the change in Gibbs free energy when lactic acid bacteria adhered to the SUS substrate. In addition, a single cell probe with a single living lactic acid bacterium was prepared, and direct measurement by atomic force microscopy using the single cell probe revealed that the adhesion force hardly acted between the cell and the SUS substrate modified with titania nanoparticles.
