Abstract
A rapid and reproducible procedure using extraction system with ethyl acetate /n-hexane(1:9) after saponification, is described for the determination of retinol in foods by the reversed phase high performance liquid chromatography. The results obtained by the proposed procedure were comparable to those by the procedure using the ethyl ether extraction system. Recoveries of retinol from egg white and pork separable fat were 99.1 and 92.2 %, respectively. The coefficients of variation were 3.0% and 0.9% for 5 replicate analyses of process cheese and infant formula, respectively.
