Abstract
An outline of the analytical methods used for various kinds of vitamins in general foods is intro duced. These methods were adopted in the 5th revised Standard Tables of Food Composition in Japan and in the Food Labeling Law in 1996. Attention for particular information is pointed out and described in correct analysis of each vitamin. In this article, shematic flow diagrams for the analytical methods of vitamin A, α-carotene,β-carotene, D_2, D_3, E, K_1, K_2, B_1, B_2, C, niacin, B_6, B_<12>, folic acid, and pantothenic acid are shown.
