The purpose of this study was to examine the development of global self-worth and domain-specific self-evaluations during early adolescence. Global self-worth was the degree to which the adolescent likes oneself as a person and is happy with oneself. Self-evaluations were assessed three distinct domains; physical appearance, athletic competence, and academic competence. Results suggested that there were declines in global self-worth and domain-specific self-evaluations during early adolescence in Japan. Moreover, there were gender differences in initial levels of global self-worth and domain-specific self-evaluations.

It is important to estimate food weight during performance of nutrition-related tasks such as menu planning and nutrition education. The objective of this study was to acquire the ability to estimate food weight from the appearance of foodstuff and examine the differences in the weight-estimation ability according to the school year and food type. In addition, the relationship between the ability to estimate food weight by the handful and the size of the palm was also examined. Our subjects (n = 148) were 77 first-year and 71 second-year students of a dietetics training course. The examination method involved visual estimation of the weight of coleslaw salad and collection of samples of the raw ingredients, i.e.,cabbage and carrot, from cooked and uncooked meals by the handful. The error rate of the handfulsampling amount and measured weight (below, handful error rate) were calculated and analyzed. The size of the palm was measured and its relationship with the handful error rate was examined. Results revealed that the handful error rate for cabbage was significantly lower for cooked meals than for uncooked meals according to both the first- and second-year students (p < 0.01), whereas the handful error rate for carrot was significantly lower for cooked meals than for uncooked meals according to the second-year students (p < 0.01). When compared by school year, the error rate for estimating cooked meals was significantly lower for second-year students than for first-year students (p < 0.01). No relationship was observed between palm size and handful error rate. Since food weight is not the same when raw ingredients are cooked, it is necessary to examine teaching methods such that people can learn food weight estimation from differences in food shape before and after cooking.

The fermented soy food “tempeh”, which is a traditional cuisine and ingredient in Indonesia, has recently been drawn attention as healthy food and good source of protein even in the other countries. Tempeh has also been introduced as a school lunch in some parts of Japan. Although the complicated fermentation conditions are very important for both substantial quality and taste, the conventional method is depending on experience and intuition. Therefore, we performed this study for the purpose of examining the feasibility of the evaluation of fermentation condition by using NIR spectroscopy. It is described that NIR is useful non-destructive analysis for chemical changes in fermenting process and internal condition of tempeh.

People referred to 2010 when iPad's were sold in Japan as ‘the 1
st Year of Electronic Books,’ but drastic changes did not happen concerning book publishing and reading. In 2012 various types of tablet terminals were released and how to name the year became a topic again. We are now endowed with a chance of witnessing a ‘Cultural Revolution’ for the first time since Johannes Gutenberg invented his own method of printing around 1455, however, the conventional method of printing would maintain its own position in publication businesses, having little influence from electronic devices concerning the potentiality of sending highly complex information. The future of print books as well as electronic ones is discussed in this paper.

This paper deals with Reinhold Niebuhr's description about justice in his famous book, The Nature and Destiny of Man. Niebuhr's interpretation of social justice will make Christian view on it clear even to non-Christian people. Niebuhr does not show the concrete ways to establish justice in historic situations or the ideal society where justice is realized. He points out that it is important to labor for higher justice under the ideal of brotherhood even though there is no possibility of making history safe against war or tyranny. For Niebuhr it is the balance of power that makes human situations close to the establishment of justice.

This report is the first part of which modified an unpublished report written in 1991 based on a research carried out from 1986 to 1991 on “Ikego Forest Conservation Movement” in Zushi city, Kanagawa prefecture, that is, Ikego US military housing units protest movement. In this report, I show findings as an archive, as much as rethinking on the outbreak of “New Social Movements” in the Japanese society from the present. In this opening section, historical process of the conflict and the Movement is reconstituted by participant observation, unstructured interview, and the knowledge from documents, in order to describe the first period of a new type of citizen's behavior in the 1980s in Japan, which consisting process of the outbreak, growth, division and decline.

The potential of social networking service: SNS for educational use and social learning to improve education effectiveness is discussed in this report through our current practice at Nagoya Bunri University. SNS was used for communication between the lecturer and the students in regular classes using iPads and in presentation settings. New social learning was also introduced in a class on mobile system development. This social learning system enabled users to write comments on e-textbook pages displayed on PC screens. The comments were shared through a computer network between teachers, student-assistants, and graduates as well as all the students in the class. This report shows how SNS and this social learning system were used in the classes.

Japanese ministery of education enforced new national standard for junior highschool at 2012. In the art standard, the line of image media fixed as a endevor aim. In the contrast with the previous standard, this is a decline revision of image media. It is possible to foresight many reason, but as a typical practical reason, there is not enough image media equioment in the school. On the other hand, Japanese government has been promoted “The Vision for ICT in Education” since 2011. It is important to think about how we apply image media, which integrated into ICT media, in the theory and practial field on art eudcation. Therefore, in this artcle proposed one theory of how knowledge cultivate and spin through image media and continuously pursuit of students learning. Furthermore, the actual class was held at the loacl junior high school based on this model. As a result of this practice, unevenness of aesthetic
sense, which obtain when the students watch image media, was reduced. Also the students who took this practice, strongly persept analogical tangible perseption when they watch image media more than the other student. This practice was considered that there is a some efficiency as a base of education through the image media on art education.

Department of Information and Media study in Nagoya Bunri University has disseminated the information for the educational applications using the tablet device, iPad, by various channels. The concrete contents of the information are related to digital textbook with multimedia function, auxiliary tools in lectures, social activities, and so on. Both the mobility comparable to that of mobile phone and large display comparable to that of mobile computer consist the characteristics of the iPad, and they are expected to bring new features in education. In the present study, we show an example using the iPad in the programming education, which is a core subject in information and media studies. Although the programming on the iPad is considerably restricted, the complementary uses of the iPad are very effective not only in programming exercises but in lectures related to programming.

In this paper, an innovative syllabus employed for a selective English course is presented along with creative activities. The syllabus is referred to as an interactive syllabus since great interactions take place among learners, teachers, and materials. The syllabus offers the list of interactive activities, and authentic materials are carefully selected and devised into attractive teaching tools to suit learners as the semester progresses. This way, current topics and issues are always dealt with in the classroom, and the course continues to be fresh and novel for years to come.

We conclude the information ethics education for the studentsin sophomore seminar courses, using the LAMS collaborative learning system. The intended use is a debate about a network crime that took place recently. With the theme that no clear preventive measures or complete laws are yet in place, the students used LAMS to explore problems about which no conclusions have been reached. Students themselves learn the current status of these issues in a survey using the Internet browser first, introduce the content and reference page to theLAMS forum, and exchanged views by the chat on LAMS. In this paper, we showthe state of the seminar and student questionnaire as an example of collaborative learning on LAMS, and examine the possibility that education can be utilized for the practice of information ethics.

The distribution of Apple's iPad2 was carried out in May, 2011 to all new students of Department of Information and Media Studies in Nagoya Bunri University. The iPad2 has a 9.7-inchi display even though its weight is as light as approximately 600g. One of the features of the iPad2 is its electronic book reader. In addition, the Wi-Fi model can get connected to the intramural wireless LAN. We used the iPad2 as a document viewer in "Information Processing Practice "offered in the second half of the same year. In this paper, we propose a possibility for the use of tablet-type devices in information education.

This article introduces a new proposal for teaching sound computing and describes a new course entitled “Introduction to digital sound”, which began this year at the Department of Information and Media Studies of Nagoya Bunri University. Currently, there are already a number of musical courses on offer such as “Computer music I / II”, “ Sound creation”, among others, which mainly deal with composing musical works. In contrast, this new course provides students with the skills to generate sound and tone using various software. As part of the final course assignment, students will be required to apply the skills learnt during the course to create original sound and tone works. The goal of this course is for students to learn, improve and apply their techniques for sound and music creation.

Nishio city, Aichi prefecture, produces the largest amount of Maccha (Japanese green tea) in Japan but this fact is rarely known by Japanese consumers. On the contrary, maccha produced in Uji city, Kyoto prefecture, is highly regarded among consumers. In order to find a clue for Nishio maccha to compete with Uji, we conducted an Internet-based survey to determine whether it keep its brand power even when used as an ingredient in processed food. As a result we found that products using Uji maccha still held higher value than other products using maccha from unspecified sources. At the same time, we clarified that the popularity of Uji maccha has no direct correlation to consumers' daily consumption of maccha, thus highlighting the complicated nature of consumers' attitudes toward food brands..

Previously, it has been well known that the acidic glycoconjugates such as acidic glycoproteins, proteoglycans and acidic glyolipids, widely distributed in the tissues and organs. These molecules play the important functions such as tissue structure holding, tissue fluid filtration, water retention and cell membrane receptor in the living organs and tissues. Histochemistry is one of tissue preparation methods using the chemical and biochemical reactions and detecting some molecules and/or reacting groups on the tissue structures. However, it is difficult to visualize proteoglycan molecules on the tissue structures accurately. In this paper, the light-microscopic histochemical methods for the detection of proteoglycans on the tissue structures using dyestuff and selective methods are introduced.

The purpose of the present study was to evaluate the effects of Grifola gargal (mushroom) extracts on insulin resistance induced by high-fructose diet in rats. Methods: 12 Male rats of Wistar strain aged 7 weeks were divided into 3 groups. There are 1) high-fructose diet group (Fructose 60% content; FRU), 2) high-fructose + Grifola gargal group (FG) and 3) normal diet group (Control). The rats in 3 groups were breeded for 4 weeks under the three conditions described above. Then, after fasting for 16 hours, a sequential euglycemic clamp experiment with two different insulin infusion rates of 6.0 (L-clamp) and 30.0 (H-clamp) mU/kgBW/minwas performed. Results: The serum glucose concentration in each rat was maintained at the level of basal blood glucose concentrations in the experiment. The glucose infusion rate (GIR) was assumed to be an index of the action of insulin for 60-90 and 150-180 minutes. As a result, the FRU group and FG group markedly reduced GIRs in L-clamp experiment compared with Control group. However, a significant difference was not able to be confirmed between FG and FRU groups. Consequently, in L-clamp and H-clamp, GIR in FG group were increased by Grifola gargal extracts compared with FRU group, and reached the almost same levels as in Control group. Conclusion: It was suggested that the administration of Grifola gargal extracts affect insulin sensitivity, and insulin responsiveness.

The rice bran oil, the only domestic edible vegetable oil made from rice bran produced in Japan, is known to be an excellent salad and frying oil with high oxidative stability and physiological activity to lower serum cholesterol. In this paper, the thermal stability of the rice bran oil was evaluated in the prolonged heat treatment , compared with the edible oils such as soybean oil and perilla oil, by the measurement of polar compounds content (PC%), peroxide value (PV), carbonyl value (CV), acid value(AV) and by the PV+CV+AV index. The thermal stability of the rice bran oil was nearly equal to those of soybean oil and perilla oil, though the increase in the AV of the rice bran oil was more than those of soybean oil and perilla oil.

A blank questionnaire and diet survey by brief-type self-administered diet history questionnaire(BDHQ) were used to find out the relationship between kindergarten children's mothers'dietary education and the quality of their diets. The subjects were divided into three groups by the mothers' scores on dietary education questionnaire; a “high score group”, a “middle score group” and a “low score group”. The study found that the mothers in the high score group took micronutrients more effectively than those in the other two groups and the content of their meals was proper. Accordingly, it was suggested that dietary education contributes to the maintenance and promotion of health not only in children but also in their mothers.
