Peptides with a molecular weight of 10, 000 or less were separated from TPCK-trypsin and/or V8 protease digests of bovine β-casein.Antigenic and immunogenic properties of the peptides were investigated by both a quantitative precipitation and an enzyme-linked immunosorbent assay.The peptides from trypsin, V 8 protease and trypsin-V 8 protease digests inhibited the binding of intact β-casein to its antibody, and had the ability to produce Ig G antibodies. A reaction was observed between the Ig G antibody to peptide from a given digest and the peptides from the other digests or intact β-casein.These results indicate that trypsin and/or V8 protease digestions still remain in both the antigenicity and immunogenicity of bovine β-casein.
