Environmental factors such as light and temperature regulate plant development. Low temperature induces chilling injury in some kinds of fruit, and low light intensity retards fruit development and induces fruit abscission. Levels of physiologically active substances (PAS) are also influenced by these environmental factors. However, certain treatments can reduce physiological disorders such as chilling injury and fruit abscission. In addition, lighting conditions and PAS are influenced in a way similar to anthocyanin biosynthetic genes. Environmental factors may cause reactions in a plant through PAS. The relationship between environmental factors and PAS in the fruit is discussed in this review.
