The depth of the kitchen sink bowl has effects on fatigue of those who work in the kitchen, efficiency of and convenience for work in the kitchen. Therefore, this study is intended to make some experiments to discover the desirable depth of the sink bowl. This paper which is Part 1 of the study describes preliminary observations and questionnaire on the usages of the kitchen sink, prior to the experiments.
The results are as follows :
1. A sink is used typically for obtaining water, preparing foods, washing food-stuff and the dishes, and collecting garbage. Its usages vary according to arrangement of equipment and side-to-side reach of working surfaces.
2. Analyzing dishwashing processes in the case of a two-compartment sink, it has been found that whether or not to use a container as is customary with Japanese determines the way of dishwashing. It has also been found that methods of washing in the sink are dependent on what to be washed; that is, usually the dishes are washed both in the sink or a container filled with water and with running water, whereas vegetables and fish are washed with running water.
