A simplified food texturometer was manufactured for trial as a improvement type upon the existing plunger test apparatus for the measuring of elastic properties (Ashi) of Kamaboko. The feature of this instrument is that the mechanical stress to be applied to the sample during the running in of the plunger can be recorded automatically on graph paper.
Experiments were made not only on various types of Kamaboko, those containing starch, those produced from tuna, and those on the market, but on fish sausage, indicating satisfactorily good accuracies of this method.
