The measurement of streaming birefringence (SB) of 0.6M KCl extracts was made with a simple SB detector on about 140 fish meats having various histories. The intensity of SB detected was scored by a 6 point numerical scale, Using the technique described in this paper, SB was detected in the actomyosin solution, but not in the myosin solution.
As the intensity of SB was not related to the protein contents of the extracts, the relationships between the intensity of SB and the results of sedimentation analysis of the extracts were examined. The SB increased as the sedimentaion coefficients S20 of the actomyosin was reduced. A good correlation was also found between intensity of SB and the height of the actomyosin peak on the ultracentrifuge pattern.
