In the previous paper, it was reported that the reaction of symmetrical thiamine disulfide with the thiol groups of protein proceeds according to pseudo-first order reaction of which apparent activation energy was calculated about 12 kcal per mole. In this report, the kinetics of the reaction between thiol-type thiamines and the disulfdie groups of oxidized egg albumin was investigated. The reaction of the protein-thiamine complex formation was also found to be pseudo-first order reaction in the initial stage. The apparent activation energy was found to be about 30 kcal per mole. The values of ΔF^+, ΔS^+ and ΔH^+ were calculated from the absolute reaction rate theory. From these kinetic studies, it was further confirmed that the protein-thiamine complexes were formed through covalent bonds.
