Rare sugars are a generic term for monosaccharides and their derivatives that are scarce in nature. Because they are sugars and have a strong association with sweetness, their applications have been generally considered to be limited to the food industry. However, the applications of sugars or carbohydrates are broad and methods of using rare sugars are beginning to be developed in a variety of industrial fields. In this review, we would like to summarize recent findings on the development of rare sugar applications in a wide range of fields.
