Mozzarella cheeses were prepared by rennet coagulation of whole raw milk acidified to pH 6.0 or 5.4 with acetic acid, followed by kneading the resulting curds in 80℃ water. Only the cheese made from the pH 5.4 curd had a fibrous texture, as observed visually and by scanning electron microscopy. While both curds had similar protein, fat and water contents, the cheese from the pH 5.4 curd contained less calcium and less fat (although fat constituents were strongly bound and finely emulsified) than the higher pH cheese. Experiments starting from milk enriched in calcium-chelating agents or from partly defatted milk, confirmed that calcium demineralization of casein micelles and a low fat protein ratio in the final cheese appear to constitute important requirements for fibre formation. Kneading the pH 6.0 curd in 80℃ water containing moderate concentrations of calcium-chelating agents also improved fibre formation. Investigation of the protein constituents of the cheeses by SEM and electrophoresis did not clearly demonstrate through which steps and chemical interactions the initial casein micelles were transformed into fibrous aggregates.

The extraction technique of Supercritical carbon dioxide is now well established. Especially extractions of edible oil from natural products have taken full advantage of it. In this paper we present the results of extraction from fisheries wastes because of anticipation that this technique can also use for it. The samples of fisheries wastes that were discharged in Aomori are internal organs of squid and digestive gland of scallop. Under high pressure condition the maximum extraction quantity was obtained in both case. Extracts of both wastes contained various lipids, vitamins and cholesterols.

In reinforcing the surface Layer of concrete, the results of experiments performed to reinforce the surface layer are described. In these experiments, the water cement ratio was reduced using a permeable sheet. The water permeable formwork method was used in combination with unwoven fabric sheets in order to density the surface layer of concrete. The results of these experiments indicated that the surface layer strength could increase if the surface is densities. Large specimens reinforced using the water permeable formwork method were placed on a seashore and at a certain inland point to examine changes in the surface layer strength relative to material aging and to verify an improvement in the strength of the concrete surface. As a result, the effectiveness of the water permeable formwork method was demonstrated.

The brackish lake, which coexisting marine and freshwater, has rich ecosystem. The precious natural environment has to be maintained. The Lake Ogawara in Aomori Prefecture is a brackish lake. The Takase river estuary is tidal river, which connects the Pacific Ocean with the lake. The field measurements of water quality were carried out for this lake on August 27,1999. In the regional development, a balance of development and preserving of natural resource should be considered.

In this paper, the Chimera method with the Schwarz algorithm which is one of overlapping domain decomposition methods is applied for a flow around a rotating body. The incompressible Navier-Stokes equations expressed in a non inertial frame of reference are used for the governing equations. The implicit scheme with accuracy of the second order is used for time discretization. The mixed finite element formulation with the iso-P2 P1/P1 elements for velocity and pressure elements is used for spatial discretization. For a numerical example, two dimensional analysis of a flow around a ellipse cylinder which rotates uniformly in a uniform flow was performed, the validity of the present technique was verified and the characteristics of the flow were considered.

Amberlite XAD-8 resin adsorbs various kinds of organic compounds. The XAD-8 resin which adsorbed a cationic surfactant adsorbs acid dye but does not adsorb basic dye, while the XAD-8 resin which adsorbed an anionic surfactant adsorbs basic dye but does not adsorb acid dye. Therefore, it is possible to separate a dye from a mixed solution that contains acid dyes and basic dyes.

It is necessary, besides a setup of yardage, to think from a viewpoint of a view or environment in the design of a golf course. In recent years, the environment that surrounds golf has changed a lot and has accomplished a remarkable increase of carry by development of tools and the training methods. Therefore, this increase of carry poses a contemporary problem of yardage as it is. In this paper, the problem of man-and-woman difference was intensively examined about yardage of the golf courses in 3 prefectures of the Northern Tohoku District. 1. The data collected in three prefectures showed that the ratio of yardage for woman to that for men was 86.7% 2. In the case of the official competition, the ratio was 89.1% 3. The ratio of women's head speed to that of men by the No.5 iron was 72.6%. As for the carry, the rate was 64.6% Consequently, it is important for a setup of yardage to take into consideration the man-and-woman differences of carry.

As many members come from the wide areas in Aomori prefecture, the exercise from the end of the college year to the early spring, namely for about two months, may be suspended unwillingly. By analysis about how the above exercise suspension influences on the body composition and physical fitness of members of the female basketball club in our college, the following results are obtained : 1) Weight is almost not changed ; 2) Although %Fat is slightly increased, no significance is recognized ; 3) Although the Body Fat Mass is slightly increased, no significance is recognized ; Lean Body Mass is decreased for seven students among ten, and its average is decreased significantly with 5% level ; 4) Vo_2max of all ten members is decreased, and the significant difference is recognized with 0.1% level ; 5) Although the average of the back strength is slightly decreased, no significance is recognized.

This report describes control of judo players' weight. In the sports of the weight class system, the weight at the time of applying for the participation to a match often increases or decreases during the conditioning before the match. In the case of judo players of Colleges of Technology in the Tohoku District, there were more rates of increase in weight than decrease. Moreover, the increase and decrease in weight were more often observed in lighter classes than in heavier classes. The conditioning for a player to demonstrate ability to the highest degree in the match concerned, which is known as Peaking, is a very important thing.

In order to lead student life, maintaining health, it is also an important element to carry, out proper weight observation by approaching from the physique-side. We collected fundamental date about the from analysis by BMI and the athletic ability and tried to make good use of them in the future. The unmbers of appearances of overweight on the basis of BMI were 39 boys out of 389 and 11 girls out of 123. Instruction and observation from a health side and a gymnastics side are required for the group of the overweight and a little overweight in the classification of corpulence degrees, which is a serious duty.

In 2000,a new department of university was founded at Avignon and Reims (in France) according to the plan of the "University 2000". Those are called "Genie du Conditionnement et de Emballage (GCE)", that is, "Engineering of Package and Packaging", and belong to the Institution Universitaire de Technologie (IUT) , that is, Institute of Technology. And those are in the new field of the education of technology in France and are multidisciplinary departments including material and mechanical technology, business administration, logistics management, and commercial science. In this paper, I introduce the purpose of their foundation, educational content and curriculum through the "Bullelin offical de I'Education National". In those departments, students have a professional training especially in the new compound area of industry, consist of technology and commerce-service. This kind of training is carried by the IUT-GCE in cooperation with companies from the needs for developing local industries, and also is expected to be effective in diminishing the number of unemployed young people. The IUT-GCE ways of training and education are so suggestive to the colleges of technology in Japan (Kousens), on the occasion of their individualization, advancement, and specialization.
