[Purpose]
Yamatomana (
Brassica rapa L. Oleifera Group), one of the traditional vegetables in Nara, is a kind of leaf vegetables in Brassicaceae.
Yamatomana contains isothiocyanates (ITC), which have anti-inflammatory and anti-tumor activities. ITC are enzymatically formed from glucosinolates (GLS) by myrosinace when vegetable cells are damaged. GLS are also converted to ITC by enterobacteria and are reported to have anti-obesity activity. However, ITC and GLS are easily lost during processing and cooking. Therefore, the development of processing and cooking methods for efficient intake of ITC and GLS from
Yamatomana is expected. On the other hand, bread is eaten in large quantities as the staple food, and various processings are possible as compared with rice. This work is aimed to develop the bread with functionality and palatability of
Yamatomana.
[Method] The bread with 0-10% freeze-dry powder of
Yamatomana was prepared by a home bakery. Size, glucosinolate content and ORAC value of the bread were determined as well as sensory evaluation.
[Results] The size and expansion degree of bread with 1-5%
Yamatomana powder were the same as those of the bread without powder. However, 10% addition of powder lowered the expansion degree of bread. In the sensory evaluation, the bread with 1% powder was the highest and the bread with 10% powder was the lowest. Moreover, it is thought that the bread with 5% powder is the most desirable for the intake of functional ingredients.
