The blue-violet fluorescent compound of spinach, reported in the preceeding paper, was found to be the monoammonium salt of an unknown acid. The structure of the acid was determined as mono-p-coumaryl-meso-tartaric acid by the results of spectral analyses and hydrolysis experiments, and finally by chemical synthesis.
