For the purpose of estimation of quality of dried laver Porphyra spp. based on bound water, glucose decomposed from polysaccharide, water-soluble protein, chlorophyll-a, vitamin C, free amino acids and bound water were measured in 31 kinds of dried laver cultured at the same “nori”-farm from 1993 to 1996 at Miyato of Miyagi prefecture. Good correlation was observed between water-soluble protein and chlorophyll-a and between water-soluble protein and bound water as a result of these measurements. All the measured constituents of the dried laver were chosen as the subject of the multiple regression analysis. The results obtained showed that the amount of protein in the dried laver was estimated by the quantity of bound water in statistical probability. Therefore, it is possible to estimate the quantity of protein in dried laver, Porphyra spp. by bound water content.
