In order to raise awareness of disaster relief food, which is needed during the sub-acute period after a disaster occurs, the registered dietitian training course students devised a nutritionally balanced pre-gelatinized rice disaster relief food and cooked it with children in a class. Disaster food recipes using pre-gelatinized rice had higher amounts of protein, calcium, vitamin A, etc., than pre-gelatinized rice alone. Pre- and post-questionnaire results of the participating children, showed that the program raised their awareness of the importance of disaster relief food, nutritional balance, and proactive behavior during disasters.
