The oxidation of vitamin A dissolved in an oil of high peroxide number such as irradiated soy bean oil or liver oil was accelerated by its exposure to air and the rate of decomposition of vitamin A is greater at higher peroxide number and larger surface area of the carrier oil but not always proportional to peroxide number. By adding antioxidants to the sample in the effective concentration or replacing the air with carbon dioxide completely, the oxidation of vitamin A was retarded greatly and their rates both coincided. So antioxidants prevent the oxidation of vitamin A, catalysed by the exposure to air, in the presence of peroxide.
