We investigated the impact of food additives on the price of fish paste products by using a hedonic price approach. For our research, food additives include preservatives, coloring materials, sweeteners, pH adjusters, polysaccharide thickeners, calcined shell calcium, trehalose, sorbitol, xylose, and calcium carbonate. As a result of the analysis, we found that products using preservatives have a statistically significantly lower price than others, and the other food additives do not have statistically significant price effects. The result suggests that preservatives contribute toward keeping the cost of goods from increasing during distribution and marketing and enable a reduction in the price of fish paste products. Using preservatives reduces the financial burden of consumers and contributes toward consumers getting substantive benefits.

Since the 1990s, the supply and demand of poultry meat have been growing rapidly in Latin American countries. One of the driving factors of the growth is the development of broiler integration in each country. With the development of broiler integration, the production of poultry meat has converted from the small-scale production by traditional poultry farmers to the modern large-scale and highly-efficient production coordinated by broiler integrators.
Latin American countries introduced technology and integration systems from the United States. However, when we compare three major broiler producing countries, Brazil, Mexico and Peru, the scope of integration and its formation are very different from country to country. By looking at the structure of supply and demand for poultry meat, and development process of major broiler integrators in each country, this paper tries to determine the factors that produced such differences.
The factors that determine the scope of broiler integration and its formation in these Latin American countries are: characteristics of distribution channels, distance between producers and consumers, entry process of integrators, and existence of farmers that raise broilers for integrators.
