This study analyzed value recognition for edible mushrooms and potential demand for artificially cultivated
Tricholoma matsutake. Results of an internet questionnaire survey of consumers were analyzed. Many of the respondents were found to enjoy
T. matsutake, with most showing little resistance to consuming artificially cultivated edible mushrooms. Specifically, the findings showed that certain consumers would potentially purchase artificially cultivated
T. matsutake. In order to investigate effective marketing strategies, it is important to consider the quality characteristics (scent, freshness, taste, etc.) of artificially cultivated
T. matsutake, and to determine an optimal price range for mushroom sales.
