    This study investigates food purchasing behaviors in the Jakarta Metropolitan area of Indonesia. A quantitative study was carried out using a web questionnaire survey. Fifteen major food items purchased through E-commerce were selected. Participants were categorized to explore food purchasing behavior. Four main results were identified: (1) food purchases through E-commerce are likely to continue to grow; (2) highly educated consumers tend to purchase food items through E-commerce; (3) food purchase intention through E-commerce is not necessarily related to household expenditures; and (4) in the case of Muslim participants, religion affects their purchasing behavior of several food items.

    To identify factors that influence customers’ repeat purchase attitude of Chinese food delivery, this study elucidated factors that affect customers' repeated purchase attitude of food delivery. The authors specifically examined factors that might affect repeat purchase attitudes, such as perceived quality, perceived value, satisfaction, and switching cost. 402 valid data were analyzed by the structural equation model (SEM). Results show that increasing the perceived value has a greater positive impact on customer satisfaction than directly increasing the perceived quality. Both the switching cost and customer satisfaction have positive effects on the repeat purchase attitude.

    This paper analyzes the effects of the frequency of visits to Japan on the frequency of eating Japanese food among Shanghai residents. The estimated results indicate that the effect of the fourth visit to Japan was the largest for the frequency of eating Japanese food. Although the effect of spreading Japanese food consumption was strong up to the fourth visit to Japan, it was suggested that marginal utility may have diminished after the fourth time as the respondents became accustomed to visiting Japan.

  • An Analysis of Asymmetric Price Transmission of Onion

    The COVID-19 pandemic resulted in the establishment of several restrictions in Japan that caused an external shock to the food supply chain. This study investigates onion price changes resulting from the shock in the Tokyo wholesale/retail market by using anomaly analysis, asymmetric price transmission, and event study. It was found that the wholesale onion price experienced a significant fall between April 2020 and May 2020 and recovered after the state of emergency. Moreover, the asymmetric price transmission from wholesale to retail markets was found before and during COVID-19, implying that the wholesale-retail relationship is resilient to the shock.

    This study analyzed the impact of the state of emergency declarations for COVID-19 on food consumption using consumer purchase history data. We performed a regression discontinuity design using a random effect Tobit model. The main finding is that both the first and second declarations increased the budget share for uncooked food and reduced the budget share for eating out; however, a significant increase in budget share for cooked food was observed only after the second declaration. The effect of the declarations on the food budget share varied by family structure and household income.

    This study estimated the linear approximate Quadratic Almost Ideal Demand System (LA/QUAIDS) of Hong Kong's fresh strawberry import demand by origin. The estimation results showed that the import demand elasticity of Japanese strawberries regarding total strawberry import expenditures has significantly decreased, as well as a significant positive cross-price elasticity of compensated demand regarding the unit price of strawberries from Korea or the USA. Thus, a strategy for strengthening the price competitiveness of Japanese strawberries is required in this market.

    In this study, examining the possibility of promoting cherry tomatoes harvesting without a calyx and cluster harvest. The questionnaire survey was targeted at university students to examine their awareness and desiring purchase price of cherry tomatoes harvesting without a calyx and cluster harvest both before and after learning about characteristics these cherry tomatoes. The results of the study suggest that many respondents were unaware of the characteristics of cherry tomatoes harvesting without a calyx and cluster harvest. In particular, the targets were attracted to cherry tomatoes harvesting without a calyx easing of preparation and the better storage quality.

    This study uses the Random Parameter Logit model and examines the determinants of consumers’ willingness-to-pay (WTP) using Structural Equation Modeling to estimate WTP concerning the purchase of animal welfare livestock products. The study results show that consumers generally positively perceive animal welfare-certified pork. The results also suggest the importance of educating people, strengthening their attitudes that purchasing animal welfare-certified pork can effectively solve animal welfare issues, and raising awareness among consumers that their actions can contribute to animal welfare issues. Raising social awareness to evaluate ethical consumption positively would also be helpful.

    Both the volume of global electric vehicle (EV) stock and the share of global EV sales are increasing. China, the EU, and other countries will continue to promote the shift from internal combustion engine (ICE) vehicles to EVs over the long term. There will be country- and region-specific differences in this shift to EVs, which will have unique long-term impacts on the biofuels and agricultural markets. Since the mid-2000s, biofuels have taken the role of the floor price effect in agricultural commodity markets. Due to the shift to EVs, the weakening of the floor price effect of the rapeseed oil market will alter its market structure. However, many other commodity markets will maintain the floor price effect, and their long-term market structures will remain unchanged.

    In Japan, there has been minimal research on the future forecasting of agricultural commodity prices. If “prices in the future harvest season ” can be predicted during the planting planning stage, a more profitable planting can be achieved. This study examines the applicability of a state-space model as a method for forecasting agricultural prices up to a year in advance. According to the analysis results, the state-space model was selected as the best model for 11 of the 14 target commodities. In particular, the state-space model with time-variant parameters was suggested to be effective in forecasting a year in advance.

    The purpose of this study was to clarify the actual status of game meat consumption and consumption intentions in urban restaurants, and to examine measures to increase consumption. The implications of the analysis are as follows. 1.Game meat served at casual restaurants tend to be a low evaluation. Cooking techniques and menu development will be important. 2. Potential consumers are consumers with a strong desire to explore food and a strong sense of meat-loving, but at present, concerns about sanitation are having a negative impact on the expansion of consumption. Therefore, providing information from restaurants to consumers about safety between is important.

    Blind tests were conducted to evaluate the taste and sensory properties of orange-cultured red sea bream (OCRSB). OCRSB belly was rated statistically higher than regular back for three items: total, color, and smell. An analysis by sex showed that the color and smell of OCRSB belly rated significantly higher for males than females. An analysis by country of origin showed that several items related to the belly or back rated higher for Chinese OCRSB than Japanese OCRSB.

    We analyze regional contributions to changes in China’s maize productivity over the period 2005–2015. National total factor productivity (TFP) for the maize industry is calculated using the share of each province’s maize production as weights. We then decompose the changes in national TFP over this period into provincial contributions. Our results show that Jilin, which is the largest maize producer among all the major production provinces, has made a negative contribution to the change in China’s maize productivity.

    This study focuses on detecting trends and topics in social science research on organic agriculture. We applied scientometric methods, such as keyword co-occurrence analysis and burst detection to keywords assigned to scientific literature related to the social sciences from 2002 to 2021. As a result, various research topics on organic agriculture from production to consumption aspects were detected. Furthermore, recent trends in social science research were detected quantitatively. These trends included meta-analysis through case study accumulation and research topics related to organic agriculture and sustainability.

  • Moving Towards Equality of ‘Capability’ not ‘Consequence’

    In this article, the food aid in Japan was examined from the capability-based perspective. The data was obtained from in-depth interviews with 53 single mothers living in urban areas. Despite being economically disadvantaged, only 62.3% had access to food aids; of these, 52.8% used food banks, 11.3% used free or subsidised meal delivery services, and 7.5% used children canteens. Nevertheless, existing food assistance was only meant to reduce the inequality of their consequences (functioning achievements), not of their freedoms (capabilities) to eat well. To expand such capabilities, more proactive aids (such as food education and housekeeping service) are required.

    To clarify the actual early childhood eating habits of children in double-income households having various work styles, this study conducted a questionnaire survey of households that sent their children to a selected nursery school in Yamagata prefecture. Regarding food consciousness, “amount of food left by children, ” “light taste, ” “using ingenuity to overcome dislike food, ” “meals held at the same time, ” “domestic foodstuffs, ” and “prefectural foodstuffs ” were significantly higher in “husband only full-time worker ” households. On the other hand, households with “one half of the couple having a night shift ” had many items with low food consciousness.

  • Qualitative Study of Young Males in Single-person Households

    This study specifically examined young males in single-person households to identify characteristics of routinizing meal preparation processes and factors affecting those processes. The study results implied three factors of different phases: the young males’ ability to prepare meals, the meal preparation environment, and their perception of meal preparation. The results confirmed, for example, a phase in which young males stop and resume meal preparation because of a change of environment when practicing meal preparation. Results also show changes of their perceptions in the process of obtaining meal preparation ability before it was routinized.

    This study sought to clarify the views of local residents regarding measures to develop university-regional cooperation, with a focus on the purchase and use of locally produced agricultural products. A questionnaire survey was sent to local residents and the responses were analyzed. The ordered probit model results revealed that several factors characterized the views of local residents regarding the purchase and use of locally produced agricultural products, including gender, past and future involvement in cooperation, reasons for evaluating cooperation, and related knowledge.
