A method to prevent the potassium bitartrate deposition in acicliried wine by replacing A. with Na was examined. In the experiment, a white wine which was made from a concentrated grape juice of foreign-made (Pedro Ximenez variety) and added with tartaric acid in a ratio of 30 was treated with Amberlite IR-122.
I. Affinities of main cations contained in the white wine to Amberlite IR-122 was as follows:
Ca> Mg> K>Fe=Cu
2. It was shown in connection with the conditions of the ion exchange treatment that a definite ratio of K to tartaric acid in the wine had important effect on the prevention of the tartar deposition.
3. It was found that the ion exchange treatment was more effective in removing tartar than thecold stabilization which had no effect on the quality of the wine.

Requirements of peptides for the growth of hiochi-bacteria

Sixty-three strains of hiochi-bacteria were examined for their requirements of peptides necessaly for growth, and following results were obtained.
1) Hetero-fermentative genuine hiochi-bacteria essentially required peptides for the growth.
2) Homo-fermettative genuin hiochi-bacteria promotively required peptides for the growth.
3) Hiochi-natured lactobacilli did not generally required peptides for the growth.
Bacto-Tryptone was fractionated by using ion-exchahge resins (Dowex 50W) which had different cross-linkages, and each fractions were examined of its growth-promotive activities. From the results, it was assumed that the peptides which were required for the growth of hiochi-bacteria were composed of a few amino-acid residue.

Effects of dipeptides on growth of genuine hiochi-bacteria were examined. All the peptides tested did not show any growth promotive effects for hetero-fermenter strain S-14.
For homo-fermenter strain S-24, some of glycine containing peptides shotend lag time of growth period, and Gly-L-Try and L-Glu-L-Try increased maximum growth value. It was assumed that peptide-uptake was not inhibited competitively by amino-acids in medium, and essential amino-acids were more easily abso rbed in form of peptides, therefor growth of strain S-24 was promoted. The mechanisms of growth-promotion of Gly-L-Try and L-Glu-L-Tyr were not clear.
