Principal Component Analysis with chemical data was applied to Commercial Shochu Samples Korui, Otsurui and Blended Shochu bought from the market.
The results are as follows;
1. First Principal Component has realtion to the content of overall flavour compounds.
2. Each of the Shochu Groups is generally classified on X-Y plot diagram. “Mugi” group of the Otsurui Shochu situated near “Soba” group.
Blended Shochu group is devided into two parts; one is characteristic of Korui and another of Otsurui.
