Glutamic acid in soy sauce was measured using the reflection photometer - RQ flex. This method utilizes glutamate dehydrogenase, and the reaction was rapid, 30℃× 30 minutes. Compared with conventional methods(HPLC method and enzymatic method), the correlation analysis result was obtained in this method. Also, good results were obtained in an addition recovery test, repeated test, and the like. By this method, it was possible to analyze quickly, simply, and inexpensively, and it was found that this could be applied sufficiently to factory management.
