Muscat Bailey A red wine made in the usual manner in October, 1992 was analyzed between May and July, 1994. The young wine was successively extracted with isoamyl alcohol and
n-butanol in order to fractionate red pigments of different molecular sizes. The
n-butanol extract was further separated into two fractions by chromatography on Sephadex LH-20 with: water and 50% ethanol. The three fractions and residual aqueous layer were spectrophotometrically analyzed. The isoamyl alcohol extract appeared to contain mainly monomeric anthocyanins, two fractions from the
n-butanol extract oligomeric and/or polymeric anthocyanins, and aqueous layer polymeric pigments resistant to pH change and bleaching by bisulfite.
