    Lecithin is known to undergo heat induced deterioration by the Maillard reaction between 1 mol of any sugar, except 2-deoxy sugar, and 2 mol of phosphatidylethanolamine (PE). However, we have previously reported that adding fatty acid metal salts can inhibit heat deterioration of soybean lecithin (SL). To clarify the mechanism of inhibition, 1,2-di-O-stearoyl-sn-glycero-3-phosphatidylethanolamine (DSPE), d-glucose, and calcium stearate or calcium decanoate were heated in octane. When DSPE and d-glucose with calcium stearate or calcium decanoate were heated in the octane, the heat deterioration of DSPE was significantly inhibited, and no increase in UV absorption at 350 nm was observed. From these reactant solutions, one compound having a phosphate group and no primary amine was isolated, and NMR spectra confirmed that two molar of stearic acid derived from DSPE were coordinated to the amino group and phosphate group of DSPE. Therefore, we concluded that adding fatty acid metal salts reduced the nucleophilic reactivity of the amino group of PE and inhibited the Maillard reaction with sugars because two molar of fatty acid derived from PE coordinated to the amino group and phosphate group of PE.

    In this study, a nutritious, healthy Chongqing hotpot oil with excellent flavor was blended while considering nutrition, flavor, and health aspects. Four blended hotpot oils prepared from fragrant rapeseed, palm, sesame, and chicken oils were analyzed to determine their physicochemical properties, antioxidant capacities, levels of harmful substances, and nutritional compositions, and their sensory qualities were evaluated. Principal component analysis was performed to identify the best hotpot oil (10% chicken oil + 20% palm oil + 10% sesame oil + 60% fragrant rapeseed oil), which exhibited good antioxidant capacity (Oxidation Stability Index: 7.95 h; 2,2-diphenyl-1-picrylhydrazyl: 168.6 μmol/kg, 2,2′-azinobis-(3-ethylbenzothiazoline-6-sulfonate): 116.7 μmol/kg, and ferric-reducing/antioxidant power: 63.9 μmol/kg), a high sensory score (7.7/10), stable physicochemical properties (acid value: 0.27 mg/g and peroxide value: 0.01 g/100 g), and high tocopherol (54.22%), and phytosterol retention (98.52%) after boiling for 8 h. Although the 3,4-benzopyrene content of this hotpot oil exceeded the EU standard after boiling for 7 h, the increase in the amount of harmful substances was the lowest.

    The present study aimed to analyze the lipid profiles of three selected chicken eggs (Nixi, silky fowl, and ordinary eggs) from the market of China by an UPLC-Q-Exactive-MS based untargeted lipidomics approach. In total, 11 classes and 285 lipid molecular species were identified from the egg yolks. Glycerophospholipids (GPLs, 6 classes, 168 lipid species) are the most abundant lipids groups, followed by sphingolipids (3 classes, 50 lipid species), and two neutral lipid classes (TG and DG). Notably, two ethersubclass of GPLs (PC-e and PE-p) and 12 species of cerebrosides were firstly detected from the chicken eggs. Furthermore, multivariate statistical analysis was performed and the lipids profiles of the three types of eggs were well discriminated from each other by 30 predominant lipids species. The characteristic lipid molecules of the different kind of eggs were also screened out. This study provides a novel insight for better understanding the lipid profiles and nutritional values of different chicken eggs.

    In this study, a comparison of the intra-regional variation in the quality of Argan oil and pomace collected from 12 cooperatives in the Essaouira region (Morocco) during the COVID-19 period was carried out. All studied Argan pomaces together with the extraction solvents showed a significant difference (p ≤ 0.05) in the total phenolic compounds, flavonoids, and tannins contents. The proteins, residual oils, total sugars, and total reducing sugars contents in the collected pomaces vary considerably among cooperatives of origin, with maximum averages of 50.45%; 30.05%; 3.82 milligrams of glucose equivalent per gram of dry matter; and 0.53 milligrams of glucose equivalent per gram of dry matter, respectively. Therefore, it is a very valuable ingredient for livestock feed and some cosmetic products that may contain it. The remaining Argan oil content in the pomace varied significantly among cooperatives, ranging from 8.74 to 30.05%. Pomace from traditional extraction recorded the highest content (30.05%), showing that the artisanal and modern extraction processes are not standardized. The measurements of acidity, peroxide value, specific extinction coefficient at 232 nm and 270 nm, and conjugated dienes were carried out in accordance with Moroccan Standard 08.5.090 in order to qualitatively classify all investigated Argan oils. Accordingly, the analyzed oils were categorized as “extra virgin Argan oil,” “fine virgin Argan oil,” “ordinary virgin Argan oil,” and “lampante virgin Argan oil.” Therefore, several factors can explain these variations in quality grades, both endogenous and exogenous. Overall, the variation observed in the obtained result allows us to deduce the most significant variables impacting the quality of Argan products and by-products.

    We investigated the skin permeation of 5-aminolevulinic acid (ALA) through Yucatan micropig full-thickness skin by using ALA-loaded W/O nanoemulsions composed of Span/Tween/ethanol (EtOH)/isopropyl palmitate (IPP)/10 wt% aqueous ALA solution. The nanoemulsions were prepared using Span 20/Tween 20 (S20/T20), Span 80/Tween 80 (S80/T80), and Span 20/Tween 80 (S20/T80) mixed surfactant systems. Based on the results of the phase diagram study and hydrodynamic diameter measurement of the nanoemulsions, we decided that the optimal weight ratio of Span/Tween/EtOH/IPP/10 wt% aqueous ALA solution in the nanoemulsion was 0.8/0.2/14/19/1.4. The permeability coefficient of ALA in the S20/T80 system was approximately five times larger than those in the S20/T20 and S80/T80 systems. The high skin permeation of ALA afforded by the ALA-loaded W/O nanoemulsion in the S20/T80 system is attributable to a significant enhancement in the partitioning of ALA to the stratum corneum.

    Dietary fish oil containing n-3 polyunsaturated fatty acids provides health benefits by lowering lipid levels in the liver and serum. β-Conglycinin (βCG) is a major constituent protein in soybean with many physiological effects, such as lowering blood triglyceride levels, preventing obesity and diabetes, and improving hepatic lipid metabolism. However, the combined effects of fish oil and βCG remain unclear. Here, we investigated the effects of a dietary combination of fish oil and βCG on lipid and glucose parameters in diabetic/obese KK-A y mice. KK-A y mice were divided into three groups: control, fish oil, and fish oil + βCG; these groups were fed a casein-based diet containing 7% (w/w) soybean oil, a casein-based diet containing 2% (w/w) soybean oil and 5% (w/w) fish oil, and a βCG-based diet containing 2% (w/w) soybean oil and 5% (w/w) fish oil, respectively. The effects of the dietary combination of fish oil and βCG on blood biochemical parameters, adipose tissue weight, expression levels of fat- and glucose metabolism-related genes, and cecal microbiome composition were evaluated. The total white adipose tissue weight (p < 0.05), levels of total serum cholesterol (p < 0.01), triglyceride (p < 0.01), and blood glucose (p < 0.05), and expression levels of fatty acid synthesis-related genes (including Fasn (p < 0.05) and Acc (p < 0.05)), and glucose metabolism-related genes (such as Pepck (p < 0.05)) were lower in the fish oil and fish oil + βCG groups than in the control group. Furthermore, the relative abundance of Bacteroidaceae and Coriobacteriaceae differed significantly between the fish oil + βCG and control groups. These findings suggest that dietary intake of fish oil + βCG may prevent obesity and diabetes, alleviate lipid abnormalities, and alter the gut microbiome composition in diabetic/obese KK-A y mice. Further research is needed to build on this study to evaluate the health benefits of major components of Japanese food.

    The physiological activity of γ-linolenic acid (GLA)-rich evening primrose oil and eicosapentaenoic and doxosahexaenoic acids-rich fish oil, which affect hepatic fatty acid oxidation and synthesis, and adipose tissue mRNA expression were compared in diabetic obese KK-A y mice. The mice were fed diets containing 100 g/kg of either palm oil (saturated fat), GLA oil, or fish oil for 21 days. These oils, compared with palm oil, greatly increased the activity and mRNA levels of hepatic fatty acid oxidation enzymes. These oils also increased the carnitine concentrations and mRNA levels of carnitine transporter (solute carrier family 22, member 5) in the liver. In general, these effects were comparable between GLA and fish oils. In contrast, GLA and fish oils, compared with palm oil, reduced the activity and mRNA levels of the proteins related to hepatic lipogenesis, except for those of malic enzyme. The reducing effect was stronger for fish oil than for GLA oil. These changes were accompanied by reductions in the triacylglycerol levels in the serum and liver. The reduction in the liver was stronger for fish oil than for GLA oil. These oils also reduced epididymal adipose tissue weight accompanied by a reduction in the mRNA levels of several proteins that regulate adipocyte functions; these effects were stronger for fish oil than for GLA oil. These oils were also effective in reducing serum glucose levels. Therefore, both fish oil and GLA-rich oil were effective at ameliorating metabolic disorders related to obesity and diabetes mellitus.

    Amazakes made from rice and koji mold are rich in nutrients, such as groups of vitamin B, minerals, essential amino acids, and oligosaccharides, and can improve skin moisturization. However, there are few reports on milk amazake, made from milk and koji mold. Therefore, in this double-blind, randomized controlled trial, we investigate the effect of milk amazake on skin function. Healthy women and men (n = 40) were randomly allocated to the milk amazake or placebo group. The test beverage was consumed once daily for 8 weeks. Skin elasticity, hydration, and transepidermal water loss (TEWL) were measured at baseline and at weeks 4 and 8, and all subjects completed the trial. Skin elasticity (R2 and R5) at 8 weeks was significantly increased in the milk amazake group compared with baseline. In addition, changes in R5 in the milk amazake group were significantly higher than those in the placebo group. Conversely, TEWL, an evaluation item of skin moisturizing function at 8 weeks, was significantly decreased in the active group compared with baseline. In conclusion, milk amazake may be useful as a functional food for improving skin function.

    A photolysis method was used to prepare a nanocomposite adsorbent (Chitosan-TiO2) and was tested for Cr(VI) removal from aqueous solution. The produce nanocomposite was investigated using, XRD, BET, FTIR, FESEM-EDX and TEM before and after Cr(VI) adsorption. The XRD results shows prepared anatase phase of TiO2 with 12 nm. According to BET measurements, the surface area of the TiO2/chitosan nanocomposite was lower and archived to 26 m2/g, while the TEM and FESEM images show a uniform distribution of TiO2 throughout the chitosan matrix. Adsorption and kinetic experiments were run in batch system under different conditions of pH, contact time, adsorbent dosage and temperature. Experimental Cr(VI) adsorption equilibrium and kinetics data fitted well to Langmuir model. The calculated Langmuir maximum adsorption capacity (qmax) value of nanocomposite was 488 mg/g. Moreover, the highest quantity of Cr(VI) uptake was achieved of pH = 2 and 45℃ and TiO2 and CS-TiO2 had respective removal efficiencies of 94 and 87.5%. The thermodynamic parameters of Cr(VI) adsorption by nanocomposite affirm the spontaneous and endothermic nature of process. Chromium adsorption mechanism by CS-TiO2 nanocomposite were proposed and discussed.

    For practical applications such as fuel cells, it is important to exploit electrocatalysis with high activity for methanol and glycerol oxidation. A platinum nanostructured electrode (PtNPs) is modified by gold adatoms and is created by application of a square wave potential regime to a tantalum surface electrode. In nanostructured platinum, the structure and the surface properties are characterized by scanning electron microscopy (SEM), X-ray powder diffraction (XRD) and cyclic voltammetry (CV). In acid and alkaline media, the CV and Chronoamperometric (CA) are studied to investigate the catalytic activity of the PtNPs nanoparticles for the electrooxidation of methanol and glycerol. The prepared nanostructured platinum on a tantalum electrode was allowed to balance an open circuit with a 1.0×10-3 M solution containing an Au ion. Consequently, the proximity of the irreversibly adsorbed Au-adatoms on the already described Pt-nanostructured electrode. In acidic and alkaline solutions, the electrocatalytically activities toward methanol and glycerol oxidation were evaluated and is found to strongly on the surface of the gold-modified PtNPs. The PtNPs modified by Au electrode system used direct methanol fuel cell (DMFC) and direct glycerol fuel cell (DGFC). The DMFC and DGFC are much higher than in acid output in alkaline. Comparison of the i-E curves of nanostructure platinum electrode with that of a platinum nanostructure electrode modified by Au under similar conditions for the letter, the charge under the peak (i-E curve) in the oxidation region was higher. Furthermore, rough chronoamperometric measurements confirmed the results. The results of showed that the electrocatalytic properties of the nanostructured prepared surface were enhanced by the inclusion of gold adatoms with a variable extent of advancement. The current peak (Ip) and the current chronoamperometric (ICA) of glycerol oxidation on the PtNPs electrode modified by Au in acid media (130 mA/cm2, 47 µA/cm2) were higher than those of the bare PtNPs electrode and in alkaline media (171 mA/cm2, 66 µA/cm2). The stronger catalytic behavior in alkaline media of the Au-PtNP electrode indicates its promising use in alkaline direct alcohol cells.

    The discharge of high-strength oily wastewater adversely affects the environment; therefore, the treatment of wastewater containing fats, oils, and grease from the food industry is of importance. In this study, we used a membrane bioreactor (MBR) to treat Ramen noodle-soup wastewater, and we evaluated the optimal oil concentration in the wastewater for the startup of the MBR treatment in winter and summer. The MBR system had a sufficient startup in both seasons when fed with a 20-fold dilution of the original oily wastewater, containing approximately 950 to 1,200 mg/L oil and approximately 3,000 to 4,400 mg/L biological oxygen demand (BOD; BOD-SS load of 0.1 to 0.2 kg/kg/d). The reactor performance in winter were relatively stable during the operation. While, activated sludge microbes in summer were not highly active with a 40-fold dilution of wastewater, because of the decreased mixed liquor suspended solid concentration during the operation period. Population shifts in the sludge microbiome with increasing oil concentrations were analyzed using high-throughput sequencing, and the relative abundance of operational taxonomic units belonging to the phylum Bacteroidetes were highest in both winter and summer when fed with 20-fold dilution of the wastewater. In particular, the family Chitinophagaceae was dominant, with relative abundances of 13.5% in winter and 5.1% in summer, suggesting that this family may play important roles in the startup of a MBR treating the wastewater.
