    Quantitative determination of textural quality of frozen food due to freezing and storage conditions is complicated,since the texture is consisted of multi-dimensiona1 factors. The author reviewed the importance of texture in food quality and the factors which is proposed by a priori estimation. New classification of expression words of textural properties by subjective evaluation and an application of four elements mechanical model for analysis of physical characteristics was studied on frozen meat patties. Combination of freezing-thawing condition on the subjective properties and physiochemical characteristics of beef lean meat and hamachi fish (Yellow-tail) meat was studied. Change of the plasticity and the deformability of these samples differed by freezing-thawing rate and cooking procedure. Also optimum freezing-thawing condition was differed from specimens.

    In this paper,a set of boundary layer equations -continuity,momentum,energy and diffusion equations -is solved numerically with satisfaction of a thermodynamic equilibrium between temperature and concentration of water vapor,when frost deposits on a vertical plate under natural convection. And the effects of frost surface temperature and ambient air condition - temperature and humidity -on the coefficients of heat and mass transfers are investigated. When the thermodynamic equilibrium is satisfied,the coefficient of mass transfer is lower and the coefficient of heat transfer is higher than ones without satisfaction of the equilibrium.

    The author and other investigators have reported experimental results that coefficients of mass transfer under frosting conditions decreased as the wall temperature decreased. On the other hand, in the previous paper,the theoretical analysis of heat and mass transfer under frosting conditions has been made with satisfaction of a thermodynamic equilibrium between temperature and concentration of water vapor in humid air. In this paper,the experimental results of Nusselt number Nu and Sherwood number Sh are compared with the analytical ones,and Sh/Nu is discussed and analyzed in consideration of phase change process of water vapor in humid air.

    The steady state characteristics of a refrigeration cycle for automotive air-conditioners using Freon 12 gas is studied numerically. The numerical method for the simulation of a refrigeration cycle executed on a personal computer is presented. The model for a refrigeration cycle consists of a compressor, condenser, expansion valve and evaporator. Non linear equations for pressure, temperature and refrigerant mass are calculated by the Newton-Raphson method. In particular, experimental date are employed for calculation of compressor condition and influence of refrigerator oil is considered. From the comparison with the experiment, it is made c1ear that this simulation is useful for the prediction of the performance of a refrigeration cycle. Therefore, the optimum design and the shortening of the design process for automotive air-conditioners are possible by this simulation.

    Binary and ternary refrigerant mixtures are attracting attentions in view of the energy saving and the ozone problem. This paper proposes modified mixing rules of two-constant (a,b) cubic equation of state for ternary mixtures. The addition of the ternary interaction parameter c123 to the mixing rule, occurring in conjunction with the parameter b,was examined in the calculation of thermodynamic properties in comparison with common mixing rules. The validity of new mixing rules was evaluated by using literary vapor-liquid equilibrium date of ternary refrigerant mixtures i. e. R14-R23-R13,R13B1-R12-R152a,R22-R12-R114,R290-R22-R115 and R12-R152a-R113. It was found that the ternary interaction parameter C123 contributes to the accuracy of the vapor pressure and is almost equal irrespective to the measured temperature. The three-dimensional representation system of the phase diagram of ternary refrigerant mixtures was also developed in order to decide compositions of alternative mixtures.

    According to the development of modern industry,many inflammable materials have been frequently used under high temperature and pressure condition,so information on the explosion limits of the materials under high pressures are required urgently. In this work,experimental studies were carried out to examine the explosion limits of HCFC141b +air and dimethyl ether +air mixtures. The explosion limits were determined using capacitance spark ignition apparatus consisting of an explosion chamber of 60mm in diameter. The temperature of gas mixture was set to 313k and pressures ranged from 0.1 to 0.5MPa. Lower explosion limits of these mixtures at atmospheric pressure were determined as 9.4and 3.8vol.% and upper explosion limits were 15.5 and 18.8vol.%, respectively. These inflammable regions spread slightly with increasing pressure. Usually,the minimum electric energy under atmospheric pressure required to ignite hydrocarbon +air mixtures is not more than 5mJ,while HCFC141b +air mixture shows weak inflammability and it seems to need at least 1J to ignite.

    The purpose of this paper is to obtain the basic data for the design of the pressure cooling system. The effects of stacking arrangements,the porosity of container and the ratio of channel width on the resistance to airflow were measured. Summary of the result is as follows : 1) The resistance to airflow of containers in rectangular stack is showed in the expression,ΔP= KQm εn, where ΔP is pressure drop,K is constant,Q is airflow rate and ε is porosity of container. The ranges of values of m and n are 1.96 ~ 2.00 and -1.98 ~ -2.13,respectively. 2) The pressure drop of four containers at the airflow rate 10m3/ min is 98.1Pa (10mmAq) when ε = 34.7% and 4.02kPa (410mmAq) when ε = 5.4%. 3) The resistance to airflow of U-shaped stack is constant at supply channel width ≥ 150mm and exit channel width ≥ 300mm.When the ratio of channel width is about 1.0,the pressure drop is the minimum. 4) As for U-shaped stack,the ranges of values for m and n are 1.93~ 2.00 and -1.75~-2.00,respectively. The pressure drop is 2.9Pa (0.3mmAq) when ε =34.7% and 123.6Pa (12.6mmAq) when ε = 5.4%at the volume ratio 50% and airflow rate l0m3/min. 5) On the consideration of the energy for airflow,the U-shaped stack is of great advantage compared with the rectangular stack.

    The cooling system controlled by the freshness estimate function to freshly store foods,was examined. To drive the freshness estimate expression,an experiment on storage of tuna was made and the following results were obtained.
    1) Ratio of weight to initial weight,yield,was greatly influenced by conditions of humidity and velocity of air.
    2) K value was not influenced by conditions of air velocity under 95-75% humidity and 0 -1m/s air velocity.
    3) Change of color was influenced by conditions of humidity and velocity of air.
    So using weight of evaporated water in tuna as a function,relative expression of humidity and velocity of air for saving weight loss of tuna was induced.

    Snow and ice are the cold heat energy resources in snowy country. They are supplied during every winter seasons and free from environmental pollution. In the previous paper, the author had proposed a design method of the cold storage house for agricultural products cooled by the cold heat source of natural snow /ice in the winter. This type cold storage house has been called as HIMURO type storage house and has been used widely in snowy country. As there are some cases that the storing products are changed or much products are temporarily stored than the initial thermal capacity, in this paper, the author investigated the temperature in the storing room of the HIMURO type storage house. The non-dimensional room temperature, which was expressed by the two non-dimensional parameters, was used and discussed to clear the effects on the temperature by many parameters.

    The authors have reported the works for the phase change process of heterogeneous composite materials involving coiled conductive solids in a medium. In these works,the effective thermal conductivity has been pointed out as an important one of the thermal properties of the composite materials. In the present study,the effective thermal conductivity of composite materials in which coiled conductive solids are packed in some medium,namely,ice,water,ethylene glycol or air,is measured by a steady state method. Otherwise,a heat conduction model is proposed by the authors and is compared with the experimental values. As a result,it was found that the effective thermal conductivity is considerably affected by factors such as the volume ratio of the conductive solids,the thermal conductivity ratio,the shape of the coils and the direction of the coils and the numerical calculations of the model agree qualitatively with the experimental values.
