    The change of organoleptic quality of Wiener sausage which was irradiated with 0.5 Mrad of gamma-ray was observed. On the 2nd and 3rd day after irradiation, off-flavor was detected when the sausage was chewed and swollen. The fading and deterioration of the color appeared on the 7th days after, whereas the off-flavor faded and could hardly detected without most careful observation. Although the off-flavor was not eliminated under cold storage <10°C or fried in vegetable oil, it was difficult to detect when heated for 5-7 min in a 80°C water.

    Photo-oxygenation of D-limonene was studied to clarify the relation between flavor in foods and photo-oxygenative change of D-limonene.
    D-Limonene was converted to photo-oxygenated derivatives which were as limoneneoxide (1, 2), terpin, p-menthadien-(2, 8)-ol-(1), carvon, carveol, isopiperitenone, and p-menthadien-(2, 8)-methylether-(1).
    Several compounds in these have been identified from auto-oxygenation of D-limonene.
    Oxydation of D-limonene was reduced by vitamin C, thiourea, palmitic acid, stearic acid and the crystal which was isolated with ether from mandarin orange fruit juice.

    Texture change of loaded Kamaboko and its recovery were investigated by the term of hardness obtained by using a texturometer.
    Change in texture of such lower loaded Kamaboko as about ten times as its own weight was not observed. When more load was applied to the sample for a long period of time, change in texture could be observed as a function of time, but its change recovered gradually with increasing time after the load was removed.
    It is considered that such load in the marketting distribution does not make change in the texture of Kamaboko.

    Respiratory rate (O2 uptake) of the fruits held in modified atmosphere (5.3% O2:4.5% CO2:90.2% N2, 5.4% O2:9.3% CO2; 85.3% N2-7.5±3.5°C) was lower than that of fruits in air, but the rate of carbon dioxide output of the fruits was higher than that of control fruits during storage. Therefore, a high respiratory quotient was observed in the fruits under the modified atmosphere. Consequently alcohol content of fruits was increased during modified atmosphere storage. A high titratable acid and lower sucrose contents were observed in the fruits stored in the modified atmosphere conditions.
