Growth steps on the olivine (001) were observed in the matrix of a primitive carbonaceous chondrite using FE-SEM (Field Emission Scanning Electron Microscope) and AFM (Atomic Force Microscope). These steps are regarded to be formed at first from vapor and then from melt via liquid phase (VLS), which indicates that early solar nebula was very dynamic condition such as generating locally rapid heating or cooling.

Using a differential interference contrast microscope, we investigated the influence of chiralites by the addition of aspartic acid to the calcite solution. The effect of the chirality on the calcite steps was found to be pronounced when spiral growth was occurring on the calcite.

As for the O/W emulsion which oil distributed water, is used in food, cosmetic and medicinal drug. Crystallization of the fat in an emulsion is also one of the factors of a quality of these products, and it is expected that solving the mechanism of the oil-and-fats crystallization in a drop leads to solution of these problems.

When lipophilic molecules are solubilized in oil/water (O/W) emulsion, normally employed techniques are to dissolve lipophilic molecules in oil, and then to prepare the O/W emulsion. In this study, we tried to put lipophilic crystals into O/W emulsion, then to solubilize lipophilic crystals in oil droplets of O/W emulsion. We examined the dependence of the particle size and temperature for the solubilization kinetics of this system.

Our recent studies enabled to make whipped cream without surfactants, using high-melting fat crystals and low-melting oil. If the whipped cream is frozen, the shelf life and mechanical stability are improved. However, crystallization temperature (T_c) of water in whipped cream is around -17℃, and it is required to increase T_c by adding nucleation promoting substances. We here report preliminary results of the effects of adding ice nucleation active bacteria on T_c of ice in whipped cream.

The emulsifying agent is widely used for various usages of the food processing. The physical properties adjustment function of the processing oils and fats is especially important. Therefore, it is indispensable to understand the mechanism of the function that the emulsifying agent adjusts oil and fat physical properties in detail. In this research, it aimed to clarify the effect of high-melting point surfactants on kinetics of nucleation and crystal growth in a separate manner.

Printing systems that are capable of displaying information are becoming increasing important as greater volumes of information become available in digital format. We proved that impurity protein molecules adsorbed more preferentially on steps than on a terrace and an induction time period existed at the initial stage of the adsorption process, on the basis of the direct observation of the adsorption process of individual fluorescent labeled impurity molecules on a tetragonal lysozyme crystal.

Plastic deformations of crystals take place when an applied stress exceeds a certain limit. In this study, we studied a stress induced structural change in n-alkanes by optical microscopic observation, IR absorption and X-ray diffraction methods. When a tensile stress was imposed on a single crystal of n-alkanes along its long axis, an instantaneous structural change took place.

The epitaxial growth of vapor deposited thin films of pentacene on alkali halide substrates were investigated by X-ray diffractometry. The epitaxial relationships between pentacene polymorphs (bulk phase and thin film phaese) and substrate crystals (KCl, KBr and NaCl) were successfully determined.

By genetically attaching Carbon Nano horn binding peptide at the N-terminus of apoferritin subnits and the survey of appropriate ferritin adsorption conditions, we have successfully made 2D array of the ferritin directly on the Si substrate deposited with carbon thin layer. This 2D crystallization features the attractive force between specific affinity peptide and the hydrophilic carbon surface.

We demonstrate photochemically-induced nucleation of thaumatin by Xe-lamp irradiation. The irradiation of supersaturated thaumatin solutions in potassium sodium tartrate, β=2, from 30-120s increased the number of thaumatin crystals in the droplet.
