The purposes of this paper are to examine the relationship between the Outline of the Countermeasures to Society with the Declining Birthrate and home economics education, and the approach to the "declining birthrate issue" in high school home economics, and to show the basic stance of home economics education about the Outline. The materials used for analysis included the Outline of the Countermeasures to Society with the Declining Birthrate which was revised in March 2015, and the high school home economics textbooks that conformed to the curriculum guidelines implemented in 1989 and afterwards. The analysis confirmed that home economics is a prominent part of today's birthrate measures, given that, as future tasks, the revised outline calls for the development of supporters of family life who have both knowledge and skills about child-rearing and housework, instead of a mere theoretical understanding of the importance of home and family. The results also call for support for comprehensive career development with a view to improving both work and family life. Furthermore, it is found that the home economics textbooks cover the following birthrate issues: declining birthrate and aging population are making it difficult to maintain Japan's social and economic systems, environments for child development and parental growth have deteriorated, and several factors are causing the low birthrate, which make childbirth complicated even if it is desired.

The aim of this research is to clarify the process of how junior high school students learn 'family relationship' through 'role playing' of family education which is based on the practice that reflects 'Science of Relationships' advocated by Kohei Matsumura. In eight lessons of family education, the students worked on the role-playing twice. The subjects of this research were 175 2nd grade junior high school students in 2011 and 2012. The handouts and students' essays after the classes were also used as the research data. The data were analyzed by the Modified-Grounded Theory Approach. The following is the summary of our findings: (1) Twenty concepts, ten sub-categories and three categories were created from the data. (2) Students practiced the role playing methods on family education and learned about family relationships through the following processes. 1 They identified with the others. 2 They realized the difference between themselves and others. 3 They discovered the reasonable relationship. (3) Three-staged learning process is considered as the elements of the action in the Science of Relationships. The contents of the elements show the following three processes, affection, cognition, and action. (4) The students are able to accept the feelings of their families through the role-playing in family education.

This study examines the factors which influence the gender equality consciousness of senior high school students and makes suggestions regarding teaching contents related to gender equality in life planning education in home economics. We surveyed 1,383 high school students through our questionnaire in 2012 in Chiba Prefecture. The main results are as follows: In the case of the students whose mothers continue to work, they tended to have more strongly positive consciousness towards employment of women than the students whose mothers gave up work. In the case of the students who placed great emphasis on a child care career while aiming at a high educational achievement, they had a negative consciousness towards the employment of women. In the case of the students in whose families all members helped with the housework, they tended to have a more strongly positive consciousness about housework and participation in child care by men than the students in whose families not all members helped with the housework. The contents of life planning education based on these results are the contents related to various life courses of women, social environments and cooperation with the housework.

In the curriculum guideline announced by the Ministry of Education in 2008, "family, home and child growth" were emphasized. In this research, the teaching practice of "family" which is a lesson or a series of lessons carried out by school teachers, are analyzed. Subjects of this research are 70 reports of the teaching practice extracted from 19books published from 1994 to 2013. Results are as follows: 1) Teaching practices are divided into 11 small groups which are then classified into three categories; "learning about families,""learning about families through human growth," and "learning about families in other areas." 2) 136teaching methods are used in 70 teaching practices. These teaching methods are classified into 36 categories. Family education classes were conducted in various ways. 3)In "learning families," the class practice was carried out not to learn the emotional aspects of the family, but to learn the knowledge about what the family is, the forms of the family, and the history and the changes of the family. 4) In "learning about families though human growth," some lessons dealt with the negative aspects such as 'abuse' or 'baby hatch.' 5) The family is also learned in the class practice of other course areas such as "Housing,""Food," and "Dairy consumption." In teaching practices which increased the students' knowledge about the family and encouraged them to think about the family consequently motivated students to recapture their own families.

In recent years, studies have shown that Japanese people tend to avoid eating fish, which is especially apparent in younger generations. This study examines the effect of a program aimed at raising awareness among high school students about daily fish requirement, cooking skills, and various independent forms of diet. The variables investigated are: knowledge, attitude, behavior and quality of life(QOL) in relation to fish eating and eating habits in general. The program consists of three steps. Questionnaires were collected three times. Improvements at the significant level were found in knowledge, attitude, behavior and QOL of the treatment groups with respect to eating habit of fish. Findings indicate that understanding the necessity of fish eating and acquiring a proper cooking method of fish may help high school students reflect on their own diet and the way to improve it.

To improve practical cooking training in the university teacher training course, tasks related to practical cooking training were organized, and effective implementation strategies were examined. Previous studies indicated that the cooking technique of students attending the teacher training course was declining over the past years, and that it was difficult to learn the correct cooking technique given the existing timeframe and teaching method. Additionally, to examine the contents of practical cooking training in the teacher training course, the course's contents as well as its results were organized. It consequently became evident that individual goal setting, implementation of one-person cooking, setting examples during cooking, sharing responsibilities, and preparing and reviewing lessons were effective strategies. Finally, previous studies' implementation strategies for one-person cooking were organized. As a result, it was suggested that repeatedly cooking a given meal and reviewing its cooking method, observation and assessment of pupils' cooking, mutual teaching among pupils, implementing principles that relate to one's own life, accumulating success experiences using simple materials, using retracement worksheets, among others, would allow effective implementation of one-person cooking.
