    This study examined how Future Homemakers of America (FHA) was created and developed, taking into consideration the transition of home economics education. The results are as follows : 1. Smith-Hughes Act created vocational home economics education, and hence, home economics students in high school became members of home economics clubs. FHA and New Homemakers of America (NHA) were founded in 1945. 2. FHA and NHA were merged in 1965 and went into national activities on various themes. 3. According to the advocacy of career education, FHA included Home Economics Related Occupations (HERO) chapter, so the activities became more extensive and it made efforts to train leaders.

    The circumstances on the establishment of the Women Teachers' Society and the state of the pioneer study on homemaking education were investigated. The following results were obtained. 1. Establishment of the Women Teachers' Society was backed by the promotion of girls education based on the nationalistic principle of 'good wife and wise mother' after the Sino-Japanese and the Russo-Japanese Wars. 2. Study on homemaking education following that of the science-oriented homemaking education was conducted by men teachers through the Society of Education or the Society of Principals, but handed over to the women teachers gradually after the establishment of the Women Teachers' Society. 3. Study on homemaking education by the Society of Women Teachers just after its establishment aimed at problems on the promotion of homemaking education and the search for measures for such promotion.

    When both educational objectives and contents of homemaking education were considered, it was necessary to know the parents' consciousness about the contents of education and how it was practiced at home. Questionnaires for 309 parents of fourth grade children weme employed. The results were as follows : 1. Throughout the educational contents, the area in which both parents and child have the least concern was clothing. 2. The contents concerned directly to children's life were properly handled, while the subjects about the scientific knowledge and skills were not. 3. As for the knowledge of nutrition in homemaking education, the contents made the parents' conscience rise but the practice at home was not satisfactory and it relied on education in school.

    This study investigated the reporter's consciousness of Home Project in the Future Homemakers of Japan from the year of 1953 to 1981. It aimed to make contribution to fullness and development of teaching Home Project. The results are as follows : 1. The reporters paid positive endeavour toward Home Project and there were evidence of help from their teachers and families. 2. The execution of Home Project gave the reporters confidence and showed improvement in their home lives.

    This study investigated about how the Home Project is conducted by chief homemaking teachers in senior high schools throughout the nation for 1981. The results are to be used in teaching Home Project hereafter. The results are as follows : 1. We recognized the endeavor of teachers who teach Home Project. Concerning the degree of interests by students, increased interest is shown by operating Home Project. 2. The improvements stated by teachers were as follows : (1) To increase full-time teachers, as it is difficult to give personal guidance because there are many students in one class. (2) To fix planning time of Home Project into the lesson. (3) To devise teaching method to be able to get cooperation from their families. (4) To devise an evaluating method.

    This investigation revealed not only the students' actual condition of dietary habits, but also the factors related to the formation of them. The subjects were 181 male and 205 female students at Shimane University. The results were as follows : 1. Their actual condition of dietary habits, especially those of the male students were generally not satisfactory. 2. It was observed that the home discipline, the school education and their consciousness were all related to the formation of their dietary habits, and that the practice and the experience of the preparing of meals were most important in order to cultivate their good dietary habits.

    An experiment was carried out with the aim of obtaining fundamental data for the teaching of "stir-frying of yellowish green vegetables with oil". The results are : 1. Solubility of β-carotene in oil increased exponentially with the rise of oil temperaure. The β-carotene dissolveed in oil was stable up to the experimental temerature of 94℃ and the experimental time of 60 minutes. 2. Amount of carotenes dissolved into oil was fairly high even at room temperature. 3. Amount of carotenes dissolved into 1ml of oil from 1g of chopped carrot was inversely related to the ratio of the former volume to the latter weight. However, total amout of carotenes dissolved from 1g of the latter was independent of the ratio and proportional to its surface area. These data indicate that stir-frying with oil at high temperature is not necessarily the best cookery for dissolving carotenes. It is considered very important to teach the pupils at Primary and junior high schools the fact that carotenes are lipidsoluble. Particularly, for the pupils at junior high school who are capable of scientific understanding, it is strongly recommended to teach the relation between vitamins and cooking through chemical experiments.

    This study was carried out to clarify an adequate way to teach the cooking quality of flour by making hot cakes. First, cooking conditions such as kind of flour, extent of mixing, leaving time of batter and ratio of water to flour, were examined. Following these results, the way of teaching in junior high school was discussed. Differences in quality of hot cake were observed by changing the kind of flour and the extent of mixing when the ratio of water to flour was 1.2. The way by which junior high school students easily understood the quality of flour was considered to be in changing the extent of mixing.

    In Japan, clothing education at the elementary and junior high school levels has been centered on the teaching of clothing construction. For a more effective teaching, however, it is necessary to let pupils and students acquire knowledge of the basic characteristics of textiles through experiments. This thesis presents a simple method for measuring air permeability, such as with a hair-drier, a hot wire anemometer, a vane anemometer, a Kata thermometer, a piece of film, a baloon, etc.
