The purpose of this research was to clarify the learning processes in home economics classes based on the results of protocol analysis from the perspective of Vygotsky’s learning-instruction theory. Following the theory the home economics classes were positioned in the learning process. The other purpose of this research was to specify the direction of lesson making. The main conclusions of this study were as follows; 1. In the beginning of the class, the learners ambiguously grasped the object. The learners eventually clarified the meaning for themselves by the interaction with others. 2. The teacher made the learners externalize their lives and family views, and encouraged interaction among learners by clarifying diversity. In addition, teachers’ encouragement to differentiate was important to activate the learner’s interaction. 3. It was important for the learners to look at their own lives, and place an object again.

The purpose of this study is to focus on Home Economics education in junior high school, and to examine how the learning contents of the older people have been captured and how the future learning of the older people should be done. For that purpose, I explained the Course of Study and textbook of Home Economics. As a result, Course of Study was found that the study of “communication with the older people” makes an emphasis through the analysis period. In the Textbook of Home Economics, first, “cooperation with the people in the family and the　　　 region”, “communication with the older people “, and “characteristics of the body of the older people” came to be described about avariety of older people. Second, “care and support for the older people” and “understanding of welfare facilities for the older people” came to be described in the text from the description of the chart only. In response to the above results, the learning of the older people from the following two viewpoints is required. First, it is need to foster the attitude of cooperation and collaboration with the older people as neighboring. Second, it is need to understand the various older people.

A questionnaire was carried out to clarify the behavior of university students’ checking food labels at the times of purchasing foods, storing foods, cooking, and disposing. The results were as follows: (1) The food label most utilized in daily life was the label of “use by date” and “the date of minimum durability”. (2) Since the most number of students checked the food labels at the time of purchasing foods, it was suggested that food labels were mainly utilized for food selections. (3) There was no relationship between behavior of checking food labels and shopping and cooking frequencies, but there was a relationship between behavior of checking food labels and understanding of food labels and marks. (4) Those who considered that useful information was obtained from food labels and those who did not feel troubled at checking food labels frequently checked the labels. In order to utilize food labels in everyday life, it is necessary to learn not only meaning of food labels but also usefulness and the usage of food labels in everyday life.
