A survey of name labelling, solidity and size of meals for persons with mastication and/or swallowing disorders

    In this study we researched the name labelling, solidity and portion size of meals consumed by persons with mastication and/or swallowing disorders. Questionnaires were sent to 114 hospitals and 181 nursing homes in Fukuoka prefecture. The I-scale was used to describe the solidity and portion size of the meals. A total of 159 hospitals and nursing homes answered the questionnaire from which 148 valid responses were analyzed. The results show that various names were used to describe both staple and supplementary meals for persons with mastication and/or swallowing disorders, with supplementary meals in particular, with a large number of different names. This study sheds light on the extent of different names assigned to the same type of meals and also the great disparity of name labelling between hospitals and nursing homes.

    The objective of this survey was to clarify issues and approach systems related to nutrition and dietary support of elderly people with medical care. The subjects surveyed were nursing care and nursing offices located in the Nishitama area and professionals. The surveys were conducted by self-administered qusetionaire and interviewing. More than 90% of professionals answered that there were problems in support of nutrition and dietary supports, and the reported tasks were different among each job category. Many professionals responded that the elderly at home needed nutrition management and they also had trouble with nutrition / dietary care. More than 20% of professionals of each occupation answered that they did not know person to whom they take counsel. This survey will serve a reference data for multi-occupational cooperation in the region, and furthermore, it will help to promote the Community-based integrated care systems.
