This study aimed to elucidate latent factors associated and business improvement with foreign body contamination of hospital food, establish preventive measures. All cases of hospital food foreign body contamination at Shizuoka Cancer Center between April 2011 and March 2016 were included. The incidence of foreign body contamination per meal and the type and source of foreign bodies were investigated for each year. Each case was reported as an incident. Overall, incidence was 0.006% (23 cases / 374,803 meals) in 2011-2012, 0.003% (12/378,931) in 2012-2013, 0.003% (10/363,200) in 2013-2014, 0.006% (22/364,091) in 2014-2015, and 0.004% (16/374,064) in 2015-2016. Hair was the most frequently found foreign body, with the following number of incidents inside the kitchen (outside the kitchen) each year: 7 (1), 5 (0), 5 (2), 3 (6), and 7 (3), respectively. During the study period, the number of cases of foreign body contamination increased significantly outside the kitchen (2, 0, 2, 13, and 8, respectively; p=0.0001253 Fisher's exact test; R) compared with inside the kitchen (21, 12, 8, 9, and 8, respectively). Hair was the most frequent latent factor associated with foreign body contamination in hospital food in each year. A longitudinal study is useful for investigating the recurrence and business improvement of foreign body contamination.
