  • Effect of Increased Sugar Concentration of Dough on the Fermentation Activity and the Baking

    In order to find the optimum sugar concentration of the dough in the baking methods with low temperature fermentation, the fermentation test and the baking test were carried out using the dough of three different sugar concentrations (2.5, 5 and 10%). The results are as follows.
    (I) In the fermentation test of the dough, the effect of the increased sugar concentration was not observed in the first fermentation period, but clearly in the second fermentation period in the high temperature region (15 and 10°C).
    (II) In the baking test, the first fermentation period to gain the good quality products was prolonged with the sugar concentration increased from 2.5% to 5% at the case of the first fermen-tation temperature 15, 10 and 5°C. The fermentation activity was hindered in the 10%. The addition of sugar was not necessary at the case of 2 °C.
    (III) The bread was too sweet when the dough with the increased sugar fermented at the low temperature in the short period. The optimum sugar concentration of the dough in the low temperature fermentation was found to be about 5 %.

    Lac-dye is generally believed to be a natural dye to develop brilliant red chromaticity which is difficult to get with other natural dyestuffs, when it is mordanted with a compound of tin. We have studied to determine what kind of tin compound should be used and what method be applied to, in order to develop of brilliant red color. As the result, we confirmed that the method to use tin dichloride before dyeing, is effective for development of brilliant red color and color fastness to light and drycreaning.
    Also through the amounts of fixing lac-dye and tin dichloride, we have ascertained that the amounts of them should be nearly the same. Though there are many natural dyes of repeating in dyeing, we confirmed that in this case, K/S value was unchanged for more than four trials.

    It has been sometimes observed that there are many examples of similar sorts in color combination, but the difference of these sorts can be found out, comparing them with each other. The purpose of this paper is to find out similar color combinations by using the combinations of vivid colors. Sixty-six pairs of color combinations were prepared from twelve vivid color standards based on P.C.C.S.
    The results are summarized as follows : some similar color combinations can be easily found out except for next three cases.
    1. A case that there is no interval between observing times.
    2. A case that the difference of lightness is great and the angle of color combination is 150-180°.
    3. A case that warm colors (R, rO, yO, Y) are used.

  • Visual Impressions for Color Combinations of the Blouse and Skirt

    This paper attempts to estimate color combinations of women's blouse and skirt by visual impression.
    Sixty-six kinds of samples were prepared making use of color simulator which could control the parts of color freely with actual impression. The Semantic Differential Method for each samples were performed by 48 panels. And 15 terms were analyzed by means of a Factor Analysis. The in fluences on these factors were analyzed by Hayashi's Quantification Scaling Type 1.
    The results show that the visual impressions for the color combinations of various blouse and skirt are composed of four factors; evaluation, activity, potency and slimness. These images are much dependent on the hue difference between blouse and skirt, tone of skirt and hue of blouse.

    In order to found the basic designing method of all kind skirt, a geometrical drawing method by theoretical development for the most simple skirt was discussed for the first time. Consequently, it was known that the skirt was designed theoretically if the next three elements; developing radius length of waist and bottom, and developing angle of the skirt were designed.

  • A New Method of Washing based on the Electro-osmosis

    The electro-osmotic flow was employed to detach soil particles from a cotton cloth. A standard cotton cloth soiled with carbon black was placed between two plastic plates dipped vertically in the washing bath. Since both plates had windows at the center, the electro-osmotic flow took place in the capillaries of the cloth, when a DC electric field was applied between two electrodes at both ends of the cell. Thus, the detachment of soil particles took place from capillary walls of the cloth. The efficiency of detergency was evaluated by reflectance measurements. After ex-amining the effects of applied voltage, electrode materials, washing time, temperature, as well as surfactant concentrations, on the detergency, it was concluded that the present method was almost equal to the standard mechanical washing in detergent efficiency under the optimum condition. Moreover, the process can be improved to give higher efficiency than the ordinary mechanical washing by preventing the deposition from the bath.

  • Dwelling Level of Residents and Their Class Forming Process

    An investigation by questionnaire was made to clarify problems pertaining to ready-built houses and find what to be desired for protection of consumers when houses are purchased. This report aimed to clarify the actual dwelling level and process of class forming by residents. Results are summarized as follows.
    1. The investigated ready-built houses have, on the average, 4.3 rooms, 25.2 Jo by unit of “tatami, ” 81.7 m2 total floor space and 233.6 m2 site space, each per house.
    2. Partition of the site space is remarkable as tendency during the last decade.
    3. The average size of families is 3.8 members, and the average age of householders is 41.1 years. By profession, engineers/office clerks are largest in number, craftsmen/laborers coming next.
    4. The greater number of the residents is composed of the former residents of rented house owned privately or company's house for employees. Their reasons of moving are “insufficient living space of the former residence” and “growth of children” including “attractive easiness of the ready-built house” as well. When purchasing, the price, trustworthiness of housing company and floor plan and equipments of house are the determining factors.
