Rice seeds (paddy) were germinated and cultured on 0.01 to 1 mM pyridoxine (PIN) solution. The added PIN was proved by paper chromatography to be incorporated and transformed into some metabolites of PIN in the seedlings. The main product among them was isolated as a PIN-derivative of colorless powder, mp 167℃, after the treatment of the extract of seedlings by ion-exchange chromatography, gel filtration and charcoaladsorption chromatography. The UV, IR and NMR spectral data on the compound implied that a hexose was bound to the 4- or 5-hydroxymethyl group of PIN. Acid hydrolysis of the compound gave PIN and glucose. It was clarified that glucose was bound to the 5-hydroxymethyl group of PIN from the positive reaction of the compound toward diazotized sulfanilic acid and the negative one to the same reagent under the presence of borate. The configuration of the bound glucose was proved to be β-from the results of hydrolysis with α- or β-glucosidase. The released sugar was oxidized to gluconic acid by the action of D-glucose oxidase, indicating that it was D-glucose. Conclusively, the isolated PIN-derivative was identified as 5'-O-(β-D-glucopyranosyl) pyrioxine.

Recently, a considerable number of beriberi patients was found among the young generation in Japan. In such situation, we investigated the food habits and dietary thiamine intake of the students and following results and conclusions were obtained. 1. We determined thiamine contents in various foods which were served at cafeteria and dormitory dining rooms of university. It is clarified that thiamine contents in various combinations of food groups on the menu are less than the value recommended by the Japanese Government (400μg/1,000 Cal). 2. Instant foods and soft drinks which are generally favorite by students contains very low amount of thiamine. 3. Survey on food habits have clarified that only 38% of students take three meals, 54% take two meals and 8% take only one meal per day. 4. From these findings, it can be concluded that dietary thiamine deficiency coupled with abberant food habits may be attributed to the occurrance of beriberi in young generation.

In various conditions, respiratory ^<14>CO_2 was determined after administration of ^<14>C-thiamine to rats and following results were obtained. 1. ^<14>CO_2 was excreted in the expiration rapidly within 6 hours after ^<14>C-thiamine administration and then slowly excreted until 24 hours. However, after 24 hours expired ^<14>CO_2 was not detected. 2. Linear relationship was observed between expired ^<14>CO_2 and amounts of injected ^<14>C-thiamine up to 100μg of administered ^<14>C-thiamine per 100g of body weight of rats. When administered ^<14>C-thiamine exceed 100μg per 100g of body weight, ratio of ^<14>CO_2 to administered ^<14>C-thiamine was decreased. 3. Amounts of expired ^<14>CO_2 per body weight was constant when fixed amounts of ^<14>C-thiamine per body weight was administered to rats.

The vitamin C activity of ascorbic acid 2-sulfate (AsS) in the newborn of rainbow trouts has been investigated. The trouts were divided into three groups : 1) vitamin C deficient diets group, 2) AsS additional diets group and 3) AsA additional diets group. Additional AsS on basal diets were onset equivalent to equal moles of AsA (1 mmol/diet 100g). Feeding test were carried out for 152 days. The deformed rainbow trout were occured to only vitamin C deficient group. This investigation has shown that AsS prevent scorbutic symptoms (deformity) in young rainbow trouts. The vitamin C level (wet weight) of 1), 2) and 3) groups after 119 days were 5.7,177 and 272μg/g in liver, 1.7,33 and 47μg/g in muscle. The hydroxyproline level (dry weight) of 1), 2) and 3) groups after 119 days were 0.92,1.44 and 1.39g/100g, after 152 days were 0.83,1.37 and 1.38g/100g in bone, respectively. Part of orally administrated AsS were hydrolyzed by AsS sulfohydrolase. In these investigation, data has shown that AsS is possessed of vitamin C activity in the newborn rainbow trout.
