Thiamin metabolism in red (soleus, S) and white (extensor digitorum longus, EDL) muscles was characterized. Thiamin triphosphate (TTP) was present at high concentration in EDL muscle from various animals except for mouse. TTP in the muscle was localized in soluble fraction as a protein-unbound form, whereas that in brain was only in particulate fraction. Particulate TTPase in the muscle was stimulated by nitrate anion, while the brain enzyme was not. The content of thiamin diphosphate (TDP) and activities of 2-oxoglutarate dehydrogenase, transketolase and thiamin pyrophosphokinase were higher in rat S muscle than in EDL, whereas TTP level was less in the former than in the later. The difference between the two muscle in thiamin metabolism except TTP level disappeared after denervation, but not after tenotomy. TDP-dependent enzyme activities, thiamin metabolism-related enzyme activities and thiamin phosphate levels were almost the same in rat EDL and S muscles at 2 weeks of age. The difference in thiamin metabolism between the two muscles was observed after 3 weeks of age.

The amounts of daily vitamin E intake in Japanese were investigated by a model menu method. One week model menu, which covers the Japanese recommended dietary allowance for energy, proteins, lipids, vitamins and minerals, was provided for couples of 30 ager's. With regard to different food habit between Tokyo and Osaka, the two kinds of menus were prepared in the both areas. Daily meals based on the menus were combined after cooking except rice and breads and then homogenized after addition of pyrogallol (2% of whole weight). The obtained slurries were lyophylized and stored bellow -16℃. Tocopherols in the lyophylized samples were extracted with 10% ethyl acetate in hexane after saponification and then analyzed by HPLC. Tocopherols in cooked rice and breads were similarly determined. α-Tocopherol (mg/day) and tocopherol equivalent values (mg/day) in the meals were as follows : [Tokyo] for husbands, 8.2-12.4 (9.9 ± 1.7 , M±SD) and 8.8-13.4 (10.9± 1.7) respectively, and for wives, 7.7-12.1 (9.3± 1.5) and 8.5-13.2 (10.3 ±1.5), respectively ; [Osaka] for husbands, 6.3-12.5 (9.0 ± 2.3), and 7.0-13.6 (10.4 ± 2.1), respectively, and for wives, 6.1-12.2 (8.7 ± 2.2), and 6.7-13.3 (9.5 ± 2.4), respectively. On the other hand, the tocopherol amounts in the same menus were calculated from the Standard Tables of Food Composition in Japan, which has been newly offered in 1989. The calculated values were generally higher (ranging from 112% to 116%) than determined ones.

A highly sensitive method for measuring vitamin K_3 levels in human plasma was developed, based on high-performance liquid chromatography with coulometric reduction and fluorimetric detection, following extraction from plasma and purification on a Sep-Pak silica cartridge. The detection limit of vitamin K_3 was 5 pg/injection for the standard substance and 40 pg/ml for human plasma.

Effect of solar radiation on vitamin D_2 contents in raw and dried Shiitake mushrooms (Lentinus edodes) was investigated. Contents of vitamin D_2 in raw Shiitake cultured in vinylhouses (average : 21 and 14 IU/piece) were generally lower than those cultured outdoors (average : 100 IU/piece). On the other hand, the contents of ergosterol in all the samples were much higher than those of vitamin D_2 (about 9,000〜46,000 times as weight ratio). When gills parts of the samples cultured in a vinylhouse were exposed to sunlight for 1 h or 3 h at a fine day, the contents of vitamin D_2 increased about 3.6 times (average : 76 IU/piece) or 5 times (average : 104 IU/piece) higher than those before radiation (average : 21 IU/piece). The vitamin D_2 contents in raw Shiitake increased according to increase of solar radiation times. When gills parts of dried Shiitake were exposed to sunlight for 1 h or 3 h, the contents of vitamin D_2 increased about 24 times (average 488 IU_piece) or 27 times (average : 548 IU/piece) higher than those before radiation (average : 20 IU/piece). The contents of vitamin D_2 in raw and dried Shiitake exposed on gills part were significantly higher than those in the samples exposed on pileus parts. Since no significant change was observed in the smell, color and taste of Shiitake by solar radiation, exposure to sunlight is an effective method for increase of vitamin D_2 in raw Shiitake mushurooms.
