It has been known that caffeic acid and other o-diphenol compounds accelerate in vitro the decomposition of thiamine at pH 7〜7.5. The rat feeding experiments were carried out to find the activities in vivo of these thermostable antithiamine factors. The basal diet was consisted of thiamine free casein 20%, sugar 69.6%, salad oil 5.0%, salt mixture 4.0%, vitamin mixture 1.0%, choline chloride 0.1%, and DL-methionine 0.3%. The amount of thiamine administered to each rat was 40μg/day, which was given orally with the vitamin solution. The test group was given additional caffeic acid 10 times moles of thiamine or the same amount of tannic acid, or 40〜400 μg of pyrithiamine together with the basal diet. Control and test groups were pair-fed for 34〜68 days. The body weight, urinary thiamine (on the 33rd or 26th day), liver thiamine, erythrocyte transketolase activity, and thiamine pyrophosphate effect were measured for control and test groups. The results indicated that there was no significant difference in these data between the control group and the test groups of caffeic acid and tannic acid, in contrast with the difference between the control and the pyrithiamine group.

The effect of ascorbate 2-sulfate (AsS) administration on AsS sulfohydrolase activity in guinea pig liver was studied. Guinea pigs fed on ascorbic acid (AsS) deficient diet were derived into six experimental groups - no AsA, 10mg AsS, 0.5mg AsA, 0.5mg AsA+10mg AsS, 2.0mg AsA and 2.0mg AsA +10mg AsS. After the feeding test for 14 days, the appearance of the generally accepted symptoms of scurvy was observed in the no AsA supplemented group and the 10 mg AsS supplemented group, indicating that AsS had no antiscorbutic activity in guinea pig. Also, no increase in the activities of AsS sulfohydrolase and arylsulfatase from guinea pig liver was observed in AsS administration.

Contents of individual tocopherols (Toc) in human milk were analysed by high performance liquid chromatography (HPLC). HPLC method is more simple and accurate as compared with other conventional methods for the determination of Toc in human milk. The mean contents of α-, β-, γ-, and δ-Toc in human milk shown from 12 mothers were as follows: In the colostra, 1,050.4, 19.1, 123.8, 16.7μg/100ml. In the transitional milk, 389.0, 8.3, 60.4, 9.5μg/100ml. In the mature milk, 317.7, 8.2, 73.0, 12.2μg/100ml; markedly high concentration of α-Toc was found in colostrum as compared with transitional and mature milk. The value of δ-Toc was about 2% of the total Toc in human milk. The contents of Toc were analysed daily from the 2nd day to the 8th day after parturition and the highest concentration of Toc was noted in the milk of the 2nd day.
