In 1952,M. Fujiwara and T. Watanabe discovered allithiamine, a new derivative of thiamine. Since this compound was synthesized by T. Matsukawa and S. Yurugi, many kinds of thiamine derivatives have been prepared. However, no systematic studies have been made on the effects of these substances on the growth of microorganisms. Then, an investigation was carried out on the growth of L. fermenti in the existence of disulfide derivatives such as thiamine allyl-, propyl-, methyl-, ethyl-, tetrahydrofurfuryl- and 2-hydroxyethyl disulfides with an interesting result that the growth activities of these substances were more remarkable than that of thiamine hydrochloride.

In a similar way to the previous work concerning the effects of the disulfide derivatives of thiamine for the growth of L.fermenti, the activities of the phosphoric, acyl and other derivatives of thiamine were examined. The phosphoric esters, i.e. thiamine mono- and diphosphates were more effective than thiamine hydrochloride, while the acyl derivatives, i.e. O-acetyl or benzoyl thiamine and O, S-diacetyl or dibenzoyl thiamine showed no apparent effects on the growth of the microorganism. S-Benzoyl thiamine monophosphate exerted an activity, but it was labile and variable under certain conditions of dissolution or heat treatment. Thio-, oxy-, dihydro-, or anhydro-thiamine and thiochrome showed no recognizable activity, while the effect of cyano- or ethyl-thiamine was similar to that of thiamine hydrochloride.

The maximum activities of thiamine hydrochloride, thiamine propyldisulfide and S-benzoyl thiamine-monophosphate were obtained at pH 6.1 and 37-42℃. The pyrimidine or thiazole moiety had only an slight effect on the growth of the organism. However, when the moieties were used together, a significant growth stimulation was observed. Furthermore, the relation between the growth and cultivation time was investigated in each case of thiamine hydrochloride, mono- or diphosphate, or methyl disulfide and benzoyl thiamine monophosphate.

In the previous report, the fact that allicin can be easily combined with albumin or rabbit and human blood to form allicin-protein complex in vitro and in vivo had been made clear. In the present experiment, the author confirmed the following facts. Allicinprotein complex was formed quantitatively with the increase of the amounts of allicin and protein. The denaturation of protein by urea or heating promoted the formation of this complex. This complex was also formed when allicin was added to egg, milk or bacterial cell. The complex was stable for about half a month and allithiamine could be formed from the complex during the period.
