We have found that Aichi Soybean Pastes are made not only from round soybeans, but with exoleated soybeans or barley mixed, and that as for the rate of fat contained among its ingredients, the value of 9% or so can be obtained as before from those kinds of pastes made from round soybeans. We have also found that the value goes down to 4% or below or nil with pastes made from exoleated soybeans and pastes made with exoleated soybeans mixed. As for protein, the value lies on the level of about 20% throughout the sample portions used and it is almost the same with that of those produced hitherto. It is thought to be an important protein source in this district.
This experiment was done to clarify the relationship between Vitamin excretions and Sulfaphthalidine. The diet was added with Sulfaphthalidine 2%, and V. B2 and V. C in feces were determined daily. The result was found to have no variation in case of V. B2 excretion in feces, but, V. C showed a tendency of decrease after adding Sulfaphthalidine.
On the foods of our country in general used all the year round or in seasons, we like to investigate certain cooking ways most efficient in order to shed light on the actual state of the loss of V. C by home-cooking. Following the previous study, we are going to report on result of experiments on spinach, cucumbers and bean sprouts.
